Dacquoise: Nut Meringue Layers

A baked meringue made with ground nuts (almonds, hazelnuts, or coconut) folded into beaten egg whites and sugar, baked at low temperature to dry without colouring significantly. The nuts inhibit the full crispness of plain meringue, producing a layer that is crisp on the exterior and slightly chewy within — capable of absorbing cream without becoming soggy.

The Method

Heat the oven to 150–160°C. Line two baking sheets with parchment and mark two 20 cm circles as guides. Verify the nut flour is completely dry; any retained moisture will prevent the meringue from drying correctly in the oven.

Sift the nut flour together with the icing sugar. The combined mixture should be uniform and fine with no visible coarse particles; coarse ground nuts produce a grainy, uneven texture and prevent even baking.

Beat the egg whites to soft peaks, then add the caster sugar gradually and continue beating to a firm, glossy meringue. The mixture holds a stiff, smooth peak when the whisk is lifted.

Add the sifted nut and icing sugar mixture to the meringue in one addition. Fold — exactly enough strokes to combine without visible streaks of dry nut flour, without deflating the foam. This is where the dish lives or dies: one addition, minimum folding, no more once the mixture is homogeneous. Over-mixing deflates the foam and produces a flat, dense result.

Pipe or spread the batter immediately within the marked circles in an even thickness. Uneven thickness causes thin areas to overbake while thick areas remain underdone.

Bake at 150–160°C until the surface is dry to the touch but slightly yielding when pressed at the centre. Completely dry dacquoise becomes too brittle for assembly; the correct result is crisp on the exterior and slightly chewy within.

Reserve — Freshly blanched and oven-dried whole hazelnuts or almonds, ground to order to a fine, even flour — maximum roasted, fatty depth with no staling.

Estate — Single-origin nut flour purchased sealed and used promptly; sifted to confirm fineness before use.

Market — Commercial almond or hazelnut flour, stored airtight; verified completely dry before folding. Reliable for assembly work.

House — Standard supermarket ground almonds, unsifted. Workable but liable to graininess and uneven bake; acceptable where texture is secondary to structure.

Sensory Tests

◇Touch. The nut flour feels completely dry and flows freely when pressed between the fingers — no clumping or moisture.
◇Sight. The beaten meringue holds a stiff, smooth, glossy peak with no graininess when the whisk is lifted.
◇Sight. After folding, no dry streaks of nut flour remain visible, and the batter retains an aerated, not liquid, consistency.
◇Touch. The baked dacquoise is dry to the touch on its surface but yields slightly under gentle pressure at the centre — neither wet nor brittle.
◇Where it lives or dies. The fold of the nut mixture into the meringue — one addition, the minimum number of strokes to eliminate dry streaks, stopped the instant the mixture is homogeneous — decides everything: too few strokes leaves unincorporated flour; one stroke too many collapses the foam into a flat, dense layer that will not recover in the oven.
