Dosa — Batter Fermentation and Spread Technique (डोसा)

Dosa is the fermented rice-lentil crepe of South India — a thin, crispy-on-the-outside, slightly soft-on-the-inside flatbread made from batter of parboiled rice and urad dal (black lentil without husk) fermented overnight. The batter's 3:1 rice-to-lentil ratio and the overnight lactic acid fermentation are where the dosa's flavour and texture originate — the fermentation produces carbon dioxide (creating lightness in the batter) and lactic acid (providing the characteristic sourness). The tawa temperature calibration and the specific spiral spreading technique determine whether the dosa is paper-thin and crispy or thick and soft.

The Method

Drain rice and urad dal; grind together with fenugreek seeds and 120ml water in wet grinder until very smooth, 8–10 minutes; transfer to bowl.

Mix in salt; let batter ferment covered at room temperature 6–8 hours until it doubles and becomes airy.

Thin fermented batter with water to crêpe consistency, roughly 300ml batter.

Heat non-stick or cast-iron skillet (26cm) to 180°C; lightly oil surface.

Pour 75ml batter in centre; using the back of a ladle, spread in thin circular motion from centre outward into crêpe about 20cm diameter.

Drizzle 5ml oil around edges; cook 2 minutes until bottom is golden and crisp, flip and cook 1 minute more.

Transfer to serving plate; serve hot with sambar and coconut chutney.

◇Where it lives or dies. The moment where dosa lives or dies is the spread — the ladle must be used in a continuous, confident circular motion from centre to edge within 2-3 seconds of pouring. Each circle should extend about 2cm beyond the previous. If the batter is at the right consistency (similar to thin crepe batter), it will flow and spread naturally. If it resists spreading, add a tablespoon of water to the batter.
