Egg Roll

A large (12-15cm) cylindrical roll with a thick, bubbly, golden-brown fried wheat wrapper enclosing a filling of finely shredded cabbage, ground pork (or shrimp), shredded carrot, and sometimes bean sprouts, celery, or mushrooms. The wrapper should be crispy and blistered on the outside, slightly chewy within. The filling should be moist but not wet. Served with hot mustard (the sharp, nasal-clearing Chinese-American mustard) and sweet-and-sour sauce (or duck sauce).

The Method

1
Cook the ground pork in a dry pan over medium heat, breaking it fine, until no pink remains. Add the shredded cabbage, carrot, and any optional vegetables — bean sprouts, celery, mushrooms. Stir and cook until the cabbage is wilted and the pan is dry. The filling is ready when no liquid pools at the bottom of the pan.
2
Spread the cooked filling on a tray and allow it to cool completely to room temperature. This step is where the dish lives or dies: a warm or hot filling generates steam inside the wrapper during frying, making it irreversibly soggy. The filling must be cold and dry before it touches the wrapper.
3
Mix the flour and water to a thick, smooth paste. Lay a wrapper on a clean surface in a diamond orientation. Place a compact log of filling across the lower third. Fold the bottom corner up over the filling, fold in the sides firmly, then roll upward into a tight cylinder 12–15 cm long. Seal the final flap with a generous smear of flour paste and press to close. Inspect every seam: any gap will admit oil and allow filling to escape.
4
Heat the oil in a deep, heavy vessel to 175°C. Lower the egg rolls in carefully, seam side down, without crowding. Fry for 3–4 minutes, turning once. The egg rolls are done when the wrapper is deeply golden-brown, blistered, and bubbly across its surface.
5
Lift the egg rolls onto a rack. They are ready to serve when the wrapper sounds hollow and crisp on a light tap and no oil weeps from the seams.

Quality Hierarchy

01
Reserve — Wrapper made from scratch with high-gluten wheat flour; filling of heritage-breed ground pork, hand-shredded napa cabbage, and fresh water chestnuts; fried in refined lard for depth of flavour.
02
Estate — Quality commercial thick egg roll wrappers; fresh-ground pork shoulder; a mix of green cabbage, carrot, and fresh shiitake mushrooms; fried in a clean, flavour-neutral oil at a precisely held 175°C.
03
Market — Standard supermarket egg roll wrappers; regular ground pork; pre-shredded coleslaw mix supplemented with carrot; fried in vegetable oil. Reliable and honest.
04
House — Frozen commercial egg roll wrappers; any available ground meat or shrimp; whatever shredded vegetables are to hand; pan-fried rather than deep-fried. The wrapper will be less blistered but the filling principle holds.

Sensory Tests

◇Sight. No liquid pools at the bottom of the cooked filling pan — the mixture is dry and cohesive.
◇Sight. The fried wrapper is deeply golden-brown with pronounced blistering and bubbles across its entire surface.
◇Touch. The sealed, unfried roll holds its cylindrical shape under gentle pressure with no soft gaps at the seams.
◇Sound. A light tap on the fried wrapper returns a hollow, dry crack — not a dull thud.
◇Where it lives or dies. The filling must be fully cooked and cooled to room temperature before wrapping — residual heat produces steam inside the sealed wrapper during frying, and a soggy wrapper cannot be recovered.
