The Method

Dice the avocado flesh into 1–2 cm cubes. Work quickly; the flesh should be fully ripe — yielding under light pressure — but hold its shape when cut. Divide evenly among four deep glasses or bowls.

Add the young coconut flesh strips and diced jackfruit to each vessel in roughly equal portions alongside the avocado. The three fruits should sit as distinct pieces, not compressed together.

Lay the grass jelly cubes over the fruit. The jelly should be firm and cut cleanly — it provides the only bitter counterpoint in the bowl; soft or collapsed jelly surrenders that contrast entirely. This is where the dish lives or dies: the textural and flavour balance between the yielding avocado, the chewy coconut, the fibrous jackfruit, and the firm, faintly bitter jelly must be present in every mouthful.

Pile shaved ice generously over the contents of each vessel. The ice must be fine and powdery, not coarse — it should mound without collapsing and begin to melt slowly into the liquids below.

Drizzle sweetened condensed milk over the ice, then pour the chilled coconut milk around and over the mound. The combined liquid should pool at the base and begin to seep upward through the ice; taste to confirm the sweetness is giddying but not cloying — the coconut milk tempers the condensed milk.

Reserve — Fresh young coconut flesh scraped from the shell that morning; a fully tree-ripened avocado of a buttery variety; fresh ripe jackfruit hand-picked at peak sweetness; house-made grass jelly from fresh cincau leaves.

Estate — Young coconut flesh from a whole coconut purchased that day; a ripe Hass avocado; good-quality tinned jackfruit in syrup, drained and rinsed; commercially produced grass jelly block, firm and well-set.

Market — Packaged young coconut strips; a sound ripe avocado; tinned jackfruit; packaged grass jelly cubes from an Asian grocer — acceptable provided the jelly retains its firmness.

House — Any ripe avocado available; tinned or jarred coconut strips; tinned jackfruit; shelf-stable grass jelly in tetra-pack form — the dessert remains recognisable, though textural contrast is reduced.

Sensory Tests
◇Touch. The avocado cube yields under the back of a spoon without dissolving — fully ripe but structurally intact.
◇Touch. The grass jelly resists the spoon with a clean, firm snap rather than collapsing or smearing.
◇Sight. The shaved ice mounds above the rim of the vessel and shows a dry, powdery surface before the liquids are added.
◇Smell. The bowl carries the clean, green fragrance of coconut milk and ripe jackfruit before the first spoonful — not a fermented or overripe note.
◇Where it lives or dies. The dish cannot cross the line into uniform softness: each of the four main components — avocado, coconut, jackfruit, and grass jelly — must retain its own distinct texture and flavour identity under the ice.
