Frappe Corse — Carnival Fried Pastry Ribbons

Thin ribbons of Triticum aestivum plain-flour dough, enriched with Gallus gallus domesticus egg and eau-de-vie (marc or aquavita corsa), fried in neutral-frying-oil until pale gold and dusted with icing-sugar. Carnival pastry across the island from January to Mardi Gras. The alcohol (2 tbsp per 500g flour) inhibits gluten development, producing extra-thin, crisp result. Ribbons cut 2cm × 15cm and twisted before frying.

The Method

Combine the sifted flour, eggs, and eau-de-vie in a bowl. Work the mixture into a smooth, cohesive dough. The alcohol inhibits gluten development; do not substitute water or milk. The dough is ready when it no longer sticks to the hand and holds a clean edge when cut.

Rest the dough briefly at room temperature, then roll it on a lightly floured surface to a maximum of 1 mm thickness. A thick sheet will absorb oil and produce a heavy, greasy result. The sheet is ready when it is translucent enough to read a finger held beneath it.

Cut the rolled sheet into ribbons of 2 cm × 15 cm. Twist each ribbon once along its length before setting it aside. This is where the dish lives or dies: ribbons cut thicker than 1 mm will never achieve the required snap, and no correction is possible once they enter the oil.

Heat the neutral frying oil to 175 °C. Verify the temperature before committing the batch: lower a single test ribbon into the oil. It should rise immediately to the surface and colour to pale gold within seconds. Adjust heat as needed before proceeding.

Fry the ribbons in small batches, turning once, until each is pale gold on both sides. Do not crowd the vessel; crowding drops the oil temperature and produces a greasy result. Remove each batch when the colour is uniformly pale gold — dark brown indicates excess heat or time.

Drain the ribbons immediately on absorbent paper, then dust at once with icing sugar while still hot. Serve immediately: the frappe must snap with no flex when broken. Any bend indicates a fault in thickness or oil temperature. Do not store dusted frappe; the icing sugar will dissolve.

Reserve — Aquavita corsa from a named Corsican distillery; flour stone-milled from island-grown soft wheat; eggs from a named estate flock; cédrat corse zest incorporated into the dough for its floral note.

Estate — Continental marc de raisin of identifiable origin; good-quality unbleached plain flour; free-range eggs; dough made to order and fried to order.

Market — Standard marc or dry grappa; commercial plain flour; barn eggs; icing sugar of reliable fineness.

House — Any neutral spirit at 2 tbsp per 500 g flour; supermarket plain flour and eggs; powdered icing sugar dusted generously to compensate for any dough irregularity.

Sensory Tests

◇Sight. Pale gold with an even, unbroken icing-sugar dusting; dark brown indicates oil too hot or ribbons left too long in the bath.
◇Touch. Snaps immediately and cleanly with no flex; any bend before breaking indicates dough too thick or oil insufficiently hot.
◇Where it lives or dies. The dough must be rolled to an absolute maximum of 1 mm and cut cleanly before frying; a ribbon even fractionally thicker will absorb oil and never achieve the required brittle snap.
