Frico Croccante — Crispy Montasio Wafer

Frico croccante is one of the simplest and most technically satisfying things a cook can make: grated aged Montasio cheese spread thin in a dry non-stick pan, melted, and then allowed to cool and set into a crisp, amber-golden wafer. No fat, no flour, no binding — just cheese, heat, and patience. The cheese proteins form a lattice as they melt, the fats render out and are reabsorbed, and the result is a crisp that shatters on the palate with an intense, concentrated aged-cheese flavour.

The Method

Set a dry non-stick pan over medium heat and allow it to come fully to temperature — the pan must be hot before the cheese is added, or the base will not set quickly enough to form a lattice. The pan is ready when a pinch of grated Montasio dropped in begins to sizzle immediately.

Scatter approximately 50 g of finely grated Montasio into the pan in a single, even layer roughly 15 cm in diameter and 3–4 mm deep. Do not compress or disturb it. Cook undisturbed for 3–4 minutes. This step decides the dish: the edges must be fully set and uniformly golden, and no white, unmelted cheese should remain visible at the centre — a pale or uneven centre means the frico will be chewy rather than crisp.

Slide a thin spatula carefully under the wafer and transfer it to a flat plate, or drape it immediately over an inverted bowl or roll it around a wooden spoon handle if a shaped tuile is required. The window for shaping is approximately 30 seconds. The frico is set and ready when it has hardened completely and shatters cleanly under light pressure.

Quality Hierarchy

Reserve — Montasio stagionato DOP, aged 18 months or more: the flavour is sharper, more granular, and more concentrated; the low residual moisture guarantees the crispest possible result.

Estate — Montasio stagionato DOP at the minimum 12-month mark: the standard of the dish as prepared in Carnia; fully correct in texture and flavour.

Market — Aged Asiago stagionato or a well-aged Parmigiano-Reggiano (24 months) are acceptable substitutes when Montasio is unavailable; the principle of a dry, hard aged cheese forming a crisp lattice holds.

House — Young or medium Montasio must not be used on the grounds of excess moisture — the frico will remain chewy. Named here only as the line that must not be crossed.

Sensory Tests

◇Sight. No white, unmelted cheese remains visible; the entire surface is a uniform amber-gold, and the edges are fully set and lacy.
◇Sound. The grated cheese sizzles on contact with the pan, confirming the pan is at the correct temperature before spreading begins.
◇Touch. Once cooled, the wafer shatters cleanly and completely under light finger pressure, with no flex or give at the centre.
◇Where it lives or dies. The frico lives or dies on the moment the cook reads the surface: every trace of white, unmelted cheese must have disappeared and the entire wafer must show a uniform amber-gold before it leaves the pan — remove it a moment too soon and moisture trapped in the centre will keep the frico soft and chewy rather than crisp.

What to Pour

A dry, unoaked white from Friuli-Venezia Giulia — Tocai Friulano or Ribolla Gialla — whose clean acidity and mineral finish cut through the rendered fat of the wafer and echo the regional origin of the dish.
