What to Pour
A dry, unoaked white from Friuli-Venezia Giulia — Tocai Friulano or Ribolla Gialla — whose clean acidity and mineral finish cut through the rendered fat of the wafer and echo the regional origin of the dish. The concentrated, tangy, nutty flavour of aged Montasio is also suited to a lightly sparkling Prosecco Brut, where the effervescence mirrors the shattering texture of the crisp.
