Frico Croccante Friulano con Montasio

The lace-crisp cheese wafer of Friuli, made from nothing but finely grated Montasio DOP aged 6–12 months, cooked in a dry non-stick pan until the fat renders, the edges crisp, and the centre firms into a disc. Cooled on a rounded surface it becomes a cracker-like cup. Distinct from the soft, potato-enriched Frico Morbido. The crisp Frico is the Friulian cheese technique in its purest form — no binder, no fat added, pure Maillard reaction on aged cow's milk cheese.

The Method

Grate the Montasio on the large holes of a box grater. Too fine and the cheese compacts into a paste; too coarse and it will not knit into a coherent disc. The result should be open, airy shreds.

Set a dry non-stick pan over medium heat. Add no oil or butter. Sprinkle roughly 100 g of grated Montasio in a thin, even layer across the base of the pan. Press lightly once with a spatula to encourage contact. This is where the dish lives or dies: the heat must be steady and moderate — high heat burns the exterior before the centre has rendered, and added fat makes the finished wafer greasy. The cheese's own fat is sufficient.

Cook without moving for 3–4 minutes. The edges will begin to bubble and colour first. Watch for those edges to turn deep gold and for the centre to look set and no longer wet. The pan will produce a quiet, steady sizzle as the fat renders.

Slide the wafer immediately from the pan and drape it over a rolling pin or any rounded surface. It is still pliable for a matter of seconds; once it cools, it sets rigid. If shaped flat, it becomes a cracker; draped, it becomes a cup. It is done when it holds its form and snaps cleanly.

Repeat with the remaining cheese in three further batches. Stored flat in a dry container, the wafers remain crisp for up to 48 hours.

Quality Hierarchy

Reserve — Montasio DOP stagionato aged 12 months or more: the fat content is highest, the moisture lowest, and the Maillard reaction yields a deeply nutty, crystalline wafer with no soft centre.

Estate — Montasio DOP stagionato at 6–11 months: still within the specified window, crisping reliably with a pronounced savoury character.

Market — Any well-aged DOP Montasio from a specialist cheesemonger, verified at minimum 6 months: the DOP designation remains the essential assurance of sufficient fat and age.

House — Young Montasio releases too much moisture to crisp. At the House rung no acceptable substitute is identified within the entry.

Sensory Tests

◇Sight. Edges are deep gold and the centre looks set, no longer wet or translucent.
◇Sound. A quiet, steady sizzle as fat renders; silence or spitting indicates the heat is wrong.
◇Touch. Lifted from the rolling pin, the cooled wafer snaps cleanly without bending.
◇Smell. A nutty, toasted aroma rises from the pan; any acrid note signals the heat is too high.
◇Where it lives or dies. The dish cannot cross into added fat or high heat: extra oil produces a greasy wafer, and excess heat burns the exterior before the centre has rendered.
