Frittata di Cipolle e Pecorino alla Calabrese
A thick, oven-finished frittata built on slow-caramelised Tropea red onions and aged Pecorino Crotonese — Calabria's answer to the Spanish tortilla. Onions are cooked low and long in olive oil until jammy, then the egg mixture is poured in and the frittata finished under the grill for a bronzed top. The sweetness of Tropea onions against pungent pecorino and fruity Calabrian olive oil creates a balance that defies its simplicity.

The Method

Warm the olive oil in a heavy ovenproof frying pan — 24–26 cm — over medium-low heat. Add the sliced Tropea onions and the pinch of dried Calabrian chilli. Cook, stirring occasionally, for approximately 15 minutes, then pour in the dry white wine. Continue cooking for a further 10–12 minutes until the onions are fully translucent, collapsed, and jammy with no remaining crispness — this is the condition that carries the dish's sweetness.

This is where the dish lives or dies. Beat the eggs lightly — no more than necessary to combine yolk and white — then fold in three-quarters of the grated Pecorino Crotonese and season with salt. Pour the mixture evenly over the jammy onions without stirring. Cook over the lowest heat for 6–8 minutes until the edges are set and opaque but the centre still moves as liquid when the pan is gently shaken.

Transfer the pan to a preheated grill and cook for 3–4 minutes. The top is done when it is bronzed and the centre offers only a slight, unified tremble — not a liquid slosh — when the pan is moved.

Remove from the grill. Scatter the remaining Pecorino Crotonese over the surface and rest the frittata in the pan for 5 minutes. The eggs continue to set during this rest; the frittata is ready to slice when it holds a clean edge under the knife.

Reserve — Cipolla Rossa di Tropea IGP certified, Pecorino Crotonese DOP stagionato aged beyond 12 months, single-estate Calabrian extra-virgin olive oil from the Ionian coast — every principal ingredient at its regional apex.

Estate — Tropea IGP onions sourced from a named producer, Pecorino Crotonese stagionato at minimum 6 months, a quality Calabrian extra-virgin olive oil with a declared fruity profile.

Market — Genuine Tropea red onions without IGP certification, any aged southern-Italian pecorino of comparable sharpness, a sound Sicilian or Campanian extra-virgin olive oil.

House — Standard red onions slow-cooked to full sweetness, a firm aged pecorino of any provenance, a clean and fruity extra-virgin olive oil — the structure of the dish is preserved though its regional character is diminished.

Sensory Tests
◇Sight. Onions are fully translucent, collapsed flat, and glistening — no white or crisp edges remain.
◇Touch. Pan moved gently: edges are firm and set; centre moves as a single slow mass, not as running liquid.
◇Sight. Grill-finished top is evenly bronzed with no wet or pale patches.
◇Touch. After resting, the frittata holds a clean vertical edge when cut with a knife.
◇Where it lives or dies. The egg mixture must be beaten only until just combined and poured over fully jammy onions — over-beaten eggs or under-caramelised onions cannot be corrected once the heat is applied.
