Fujian Swallow Skin Dumplings (Yan Pi) — Fish-Flour Wrapper

Yan pi (燕皮) — swallow skin dumplings — use a wrapper made from pork tenderloin beaten with sweet potato starch to paper-thin transparency. Unlike all other Chinese dumpling wrappers (flour-based), yan pi is a meat-starch hybrid, creating an extraordinary silky texture. A Fujianese specialty, particularly from Nanping. The pork filling inside is mild — the wrapper is the star.

The Method

Lay the dried yan pi sheets flat and brush both surfaces lightly with cold water. Allow the sheets to rest until fully supple and pliable — no dry or brittle patches remain. A sheet that tears at the fold is not yet ready; continue resting under a damp cloth.

Combine the minced pork and chopped shiitake mushrooms. Mix until the filling coheres into a compact mass. Keep the seasoning mild — the filling is subordinate to the wrapper.

Place a small amount of filling — erring toward less rather than more — at the centre of each wrapper. The wrapper-to-filling ratio must favour the wrapper. Fold and seal the edges firmly. This is where the dish lives or dies: an over-filled or imperfectly sealed dumpling will burst during cooking, and a torn wrapper cannot be recovered.

Bring the clear chicken stock to a gentle simmer in a wide pan. Lower the dumplings in carefully and cook for 2–3 minutes. The dumplings are ready when the wrappers turn translucent and the parcels float freely, with no opacity remaining at the sealed edges.

Ladle the dumplings into bowls with a generous measure of the clear broth. The transparency of the wrappers should be fully visible through the stock. Serve at once.

◇Touch. Reconstituted yan pi sheets bend without cracking and yield to light pressure without tearing at the fold.
◇Touch. Sealed edges hold firm under gentle pressure — no gaps or lifted seams.
◇Sight. Cooked dumplings float in the broth with wrappers fully translucent, revealing the filling within.
◇Where it lives or dies. The wrapper must be reconstituted to full pliability before filling, and each parcel sealed without over-stuffing — a torn or burst wrapper is irrecoverable.
