What to Pour
A cold, lightly sweet teh tarik (pulled tea) or a plain jasmine-scented iced tea cuts the richness of the coconut sauce and complements the warming spice; for a non-alcoholic table this is the classical pairing. Where wine is served, a low-tannin, fruit-forward red with gentle spice — such as a cool-climate Grenache — does not compete with the cumin and fennel.
