King cake is the defining food of New Orleans' Mardi Gras season (Epiphany on January 6 through Fat Tuesday), a ring-shaped enriched bread filled with cream cheese or praline, decorated in the Mardi Gras colours of purple (justice), gold (power), and green (faith), and hiding a plastic baby figure inside. The person who receives the baby in their slice is crowned 'king' and must either host the next party or buy the next king cake — a Mardi Gras tradition that has perpetuated the cake through generations. The preparation is similar to brioche or Danish pastry: a yeast-enriched dough, braided or twisted into a ring, filled, and baked until golden, then decorated with coloured sugar and cream cheese icing. The baby, pressed into the bottom of the baked cake before icing, is a ritual element as much as a culinary one.

The Method

Combine flour, yeast, salt, and sugar in large mixing bowl; create well and add eggs, milk, and cream; mix until shaggy dough forms.

Knead dough 8 minutes by hand or 5 minutes in mixer until smooth and elastic; incorporate butter in small pieces, then orange flower water and candied peel.

Form into ball; place in oiled bowl, cover, and prove 60 minutes until doubled in volume.

Shape dough into 25cm ring on parchment; cover and prove 45 minutes until puffy.

Bake at 190°C for 25 minutes until deep golden and hollow-sounding when tapped.

Whisk icing sugar with lemon juice to create pourable glaze; drizzle over warm cake and sprinkle immediately with pearl sugar.

Cool on wire rack 20 minutes before slicing.

◇Sight. Golden braided ring rises to double its size during proof; dough springs back slowly when pressed.
◇Where it lives or dies. Baby inserted after baking and cooling — pressing before bake melts it or distorts the surface.
