Kolak: The Ramadan Sweet

Kolak — banana and/or sweet potato simmered in coconut milk and palm sugar with pandan leaf — is the traditional sweet consumed at *buka puasa* (breaking of the fast) during Ramadan. It is the first thing many Indonesian Muslims eat after sunset during the fasting month.

The Method

Combine the coconut milk, pandan leaves, and palm sugar in a saucepan over a moderate flame. Stir steadily until the palm sugar has fully dissolved — the liquid should be uniformly amber and carry no granular resistance when a spoon is drawn across the base.

Add the sweet potato cubes. Simmer gently, uncovered, until they yield without resistance to the tip of a knife — the flesh should be tender through, not chalky at the centre.

Add the banana rounds and continue to simmer. This is where the dish lives or dies: the bananas must be heated only until just softened and warmed through — overcooked, they dissolve into the broth and the kolak loses all distinction of texture. The rounds should hold their shape and give gently under light pressure.

Remove the pandan leaves. Taste the broth: the balance of coconut richness, palm sugar sweetness, and the faint grassy fragrance of pandan should be harmonious. Ladle into bowls and serve warm or at room temperature, as is traditional at buka puasa.

Estate — Good-quality bottled coconut milk (full-fat, minimal stabilisers); artisan palm sugar blocks from a reputable Indonesian or Malaysian source; frozen pandan leaves thawed and knotted; ripe pisang kepok or equivalent variety; firm, flavoursome sweet potato.

Market — Canned full-fat coconut milk; palm sugar from a mainstream Asian grocer; fresh pandan from a Southeast Asian market if available, otherwise frozen; any ripe, firm banana and standard orange-fleshed sweet potato.

House — Canned coconut milk of any brand; dark brown sugar in place of palm sugar (the molasses note approximates but does not replicate); pandan extract used very sparingly in place of leaves; any ripe banana; any sweet potato.

Sensory Tests

◇Smell. The pandan leaves release a warm, grassy, faintly vanilla-like fragrance into the coconut milk as it heats — this signals the infusion is active.
◇Sight. The broth turns a uniform soft amber as the palm sugar dissolves; no dark unincorporated streaks remain.
◇Touch. A knife tip meets no resistance at the centre of a sweet potato cube — the flesh is tender throughout.
◇Touch. A banana round gives gently under the lightest pressure of a spoon but does not collapse or fall apart — the precise moment to stop cooking.
◇Where it lives or dies. The banana must be withdrawn from the heat the moment it softens — a few seconds beyond that point and it collapses into the broth, erasing the kolak's character entirely.
