What to Pour
A crisp, unoaked or lightly oaked Chardonnay from Burgundy or coastal California; alternatively, a bone-dry Muscadet sur lie, whose saline minerality bridges the sweetness of the lobster and the acidity of the Maine dressing without competing with the butter of the Connecticut version. A cold pilsner — malt-light, hop-restrained — is the vernacular choice at the Maine roadside stand and is no less correct.
