Mac Salad — Hawaiian Macaroni Salad
Elbow macaroni is cooked two to three minutes past al dente until soft. Drained and mixed hot with grated carrot, a splash of vinegar or milk, and generous Best Foods mayonnaise. Seasoned with salt and white pepper. Refrigerated for several hours (overnight is best) so the noodles absorb the dressing. The final mac salad should be creamy, soft, and mild.

The Method

Bring a large pot of well-salted water to a rolling boil. Add the elbow macaroni and cook two to three minutes beyond the package's stated time. The noodles must be fully soft — yielding with no resistance whatsoever at the centre. Drain immediately.

Transfer the drained macaroni to a large bowl while it is still hot. Add the grated carrot and the splash of vinegar or milk, and stir to combine. The heat opens the noodles so they absorb the dressing; the carrot softens against the residual warmth. The mixture should smell faintly of vinegar and steaming starch.

Add the Best Foods mayonnaise and fold thoroughly until every noodle is coated. Season with salt and white pepper. The salad should look uniformly creamy white with visible flecks of orange carrot throughout.

Cover and refrigerate for several hours — overnight is best. The noodles will absorb the dressing and the salad will become denser and creamier. If the texture appears tight after chilling, fold in a little additional mayonnaise. The finished salad is mild, creamy, and slightly tangy at the back of the palate.

Market — Acceptable creaminess but noodles verging on too firm, or dressing slightly thin.

House — Al dente noodles or insufficient mayonnaise — dry, not creamy; the salad has missed its defining character.

Sensory Tests
◇Touch. Noodles offer no resistance when pressed between the fingers — fully soft, not al dente.
◇Sight. Creamy white throughout with even flecks of orange carrot; no dry or clumping patches.
◇Smell. Mild mayo aroma with a faint vinegar tang — nothing sharp or dominant.
◇Touch. After chilling, the salad is dense, yielding, and cohesive when lifted with a spoon.
◇Where it lives or dies. The noodle texture decides this dish: cook the macaroni two to three minutes past the package directions until fully soft — any trace of al dente resistance means the salad has failed its purpose.
