Natillas: New Mexican Egg Custard
Natillas — the poured egg custard dessert of New Mexican and Spanish Colonial cooking — is the Western Hemisphere version of the Spanish natillas, survived in its purest form in New Mexico's isolated colonial communities. It is a simple, light, egg-and-milk custard flavoured with cinnamon, served at room temperature or slightly chilled — a dessert of extraordinary delicacy achieved through the simplest possible ingredients.

The Method

Warm the whole milk in a heavy saucepan over low heat with the canela stick. Heat until steaming but not simmering. Remove from the heat and allow the canela to infuse until the milk is noticeably fragrant with cinnamon.

Beat the whole eggs and yolks together in a bowl until smooth and uniform in colour. Remove the canela stick from the infused milk.

This is where the dish lives or dies. Ladle the hot milk into the beaten eggs in a slow, steady stream, whisking continuously throughout. The addition must be gradual — a sudden pour will scramble the eggs on contact. The tempered mixture should be smooth, pale, and fully integrated, with no threads of cooked egg visible.

Return the tempered mixture to the saucepan. Cook over the lowest possible heat, stirring constantly with a wooden spoon, until the custard reaches 82°C and coats the back of the spoon cleanly — a finger drawn across the spoon leaves a distinct, stable line. Do not allow the temperature to exceed 85°C; beyond this point the eggs curdle and the custard cannot be recovered.

Pour immediately into shallow bowls, where the custard should spread gently to the edges — pourable and fluid, thicker than pouring cream but not set. Allow to cool to room temperature or chill slightly before service. Dust each portion with finely ground canela at the moment of serving.

Market — Ceylon cinnamon sticks from a well-stocked grocery. Standard whole milk.

House — Pre-ground Ceylon cinnamon. Supermarket whole milk. The result is still sound; the infused fragrance and the ground cinnamon's lift at service will be perceptibly flatter.

Sensory Tests
◇Smell. The milk smells distinctly of warm cinnamon before tempering begins — the infusion is complete.
◇Sight. The tempered mixture is smooth and pale with no threads or flecks of cooked egg — tempering has succeeded.
◇Touch. A finger drawn across the back of the spoon leaves a clean, stable line — the custard has reached 82°C and is done.
◇Sight. Poured into a shallow bowl, the custard spreads to the edges under its own weight — the consistency is correct.
◇Where it lives or dies. The tempering cannot be rushed: hot milk added all at once scrambles the eggs and the custard is lost.
