Northern Chinese Stuffed Flatbread (Xian Bing) — Pan-Fried Filled Bread
Xian bing (馅饼) — stuffed pancake/flatbread — is a Northern Chinese street food: a thin wheat dough is filled with spiced pork and vegetable mixture, folded and sealed, then pan-fried in a flat pan with oil until golden on both sides. Distinct from jiaozi (boiled) and sheng jian bao (steamed-then-fried): xian bing is entirely pan-fried and has a thicker dough.

What to Pour
A lightly chilled, dry-hopped pale lager or a clean, unoaked Chinese rice wine (huangjiu) served warm — both cut the oil of the crust without overwhelming the ginger and sesame aromatics. Black vinegar served at table functions simultaneously as condiment and palate cleanser.
