Omelette Soufflée (Dessert Soufflé Omelette)

A hot dessert of separated eggs — the yolks beaten with sugar and flavouring, the whites beaten to stiff peak and folded in — cooked briefly in an oven-proof pan until the base has set and the top is still soft, then folded in half and served immediately. The soufflé omelette is the fastest of all classical hot desserts — 5 minutes from beginning to service — and shares with the soufflé the same textural lightness from the egg white foam, but achieves it without moulds and without the 15-minute baking time.

The Method

Separate 12 eggs into two clean bowls. Beat the yolks with 120 g caster sugar until the mixture is pale and falls from the whisk in a thick, unbroken ribbon.

Add a pinch of salt to the whites and beat to a stiff, glossy peak — the mass holds its shape when the bowl is inverted.

Fold the whites into the yolk mixture in two additions, working quickly and with a light hand. The batter is ready when no white streaks remain and the foam is still fully inflated.

Melt the butter in a large oven-safe pan over medium heat. Pour in the egg mixture and smooth the surface level. Cook on the stovetop for 1 minute — the base has set when it no longer moves when the pan is tilted gently.

Transfer the pan to a very hot oven at 220 °C and bake for 2–3 minutes. This is where the dish lives or dies: the top must be just barely set — it should tremble faintly at the centre when the pan is moved, and carry no raw liquid on its surface. An extra minute produces a collapsed, leathery interior; the moment it holds itself, the pan leaves the oven.

Fold the omelette in half in the pan and slide it immediately onto a warm plate. It is at its peak for approximately 90 seconds after folding. It must reach the table before the foam begins to subside.

Reserve — Eggs from a single named breed (Bresse hen or equivalent) with a deep-orange, high-fat yolk; sugar refined from unblended cane; butter from raw cream, cultured and hand-churned.

Estate — Free-range eggs with visibly rich yolks; unrefined golden caster sugar; a quality European-style unsalted butter with at least 84 % fat.

Market — Good free-range eggs, standard caster sugar, and any reliable unsalted supermarket butter — the result is honest and correct.

House — Any fresh egg separated cleanly; granulated sugar dissolved thoroughly into the yolks; salted butter accepted only if rinsed of excess salt.

Sensory Tests

◇Sight. Yolk-sugar mixture falls from the whisk in a thick, continuous ribbon without breaking — ribbon stage is reached.
◇Sight. Beaten whites hold a firm, glossy peak and do not slide when the bowl is tilted; no liquid pools at the base.
◇Touch. After one minute on the stovetop, the base does not move when the pan is tilted — it has set sufficiently to enter the oven.
◇Touch. After 2–3 minutes at 220 °C, the top trembles faintly at the centre but carries no raw liquid — the moment to fold and serve.
◇Where it lives or dies. The omelette is at its peak for approximately 90 seconds after folding — it must be on the plate before the waiter reaches the table.
