Padrón peppers: the one-in-ten technique

The small green peppers of Padrón, Galicia — pan-fried whole in olive oil until blistered and lightly charred, then seasoned with coarse sea salt. The famous saying applies: 'Os pementos de Padrón, uns pican e outros non' — Padrón peppers, some are hot and some are not. Approximately one in ten (or twenty, depending on growing conditions and time of year) carries a capsaicin hit; the rest are mild, sweet, and grassy. This culinary roulette is the point. The technique is among the simplest in Spanish cooking: very high heat, small amount of olive oil, the peppers tossed and blistered for 3-4 minutes. The skin should char in spots, the flesh beneath should remain slightly firm. Season aggressively with flaky sea salt only after frying.

The Method

Set a heavy frying pan or griddle over the highest available heat. Allow it to become thoroughly hot before adding anything — a drop of water placed in the pan should evaporate on contact.

Film the pan with the smallest quantity of olive oil that will coat the surface. Add the peppers immediately in a single layer without crowding; work in batches if necessary. A pan that is too full causes the peppers to steam rather than char, and the dish is lost here: this is where it lives or dies.

Toss or shake the pan continuously for 3 to 4 minutes. The peppers are ready when the skin is blistered and charred in spots across the surface while the flesh beneath remains slightly firm to a light press.

Remove the peppers immediately to paper. Season at once with very coarse flaky sea salt. Serve within 5 minutes — the texture deflates on standing.

Reserve — Peppers sourced directly from Padrón or its immediate municipality in Galicia, harvested July–August when capsaicin variability is at its highest and the roulette element most pronounced.

Estate — Certified Padrón peppers from a named Galician producer, available through specialist importers; the characteristic grassiness and heat variability are reliably present.

Market — Commercially grown Padrón peppers from a good greengrocer or farmers' market, picked in season; May–June stock will be milder and more uniform, July–August stock more unpredictable.

House — Supermarket Padrón peppers, year-round supply; heat variability is lower and flavour less intense, though the technique and the essential character of the dish remain intact.

Sensory Tests

◇Sound. The peppers hiss sharply on contact with the pan; a muted or absent sizzle means the heat is insufficient.
◇Smell. A clean, grassy char rises from the pan within the first minute; any steaming or boiling smell indicates crowding.
◇Sight. Dark blistered patches appear across the skin in uneven, slightly charred spots while the body of the pepper retains its green colour.
◇Touch. The flesh yields very slightly under a light press but does not collapse — it remains firm beneath the blistered skin.
◇Where it lives or dies. The pan must be hot enough and uncrowded enough that every pepper chars and blisters; a crowded or insufficiently heated pan produces only soft, steamed flesh with no colour and no point.
