Bolzano's rye-and-caraway bread — a dense, dark loaf made entirely from segale (rye flour) with whole caraway seeds (kümmel) throughout, baked in a wood-fired oven. In Alto Adige, this bread is the everyday table bread rather than wheat bread — it accompanies Speck, smoked cheeses, and the preserved meats that define the region. The caraway seeds are not a garnish — they are distributed throughout the crumb at a ratio that produces a warming, anise-adjacent flavour in every bite.

The Method

Refresh the lievito madre at least twice before beginning, allowing a full fermentation cycle between each refresh. The starter is ready when it has doubled and smells sharply sour — a flat or milky smell means insufficient acidity; proceed only when the acid tang is pronounced.

Combine the rye flour, salt, and whole caraway seeds in a large bowl and mix briefly to distribute. Add the lievito madre and the lukewarm water at 70–75% hydration (350–375 ml). Mix with a stiff spatula or wet hands until a cohesive, very sticky mass forms. Do not knead: rye dough cannot be worked in the conventional sense. The dough is ready when no dry flour remains and the mass holds together as a single, dense, porridge-like body.

Transfer the dough into a sealed loaf tin, smoothing the surface with wet hands. Brush the top with water. Score decisively down the centre with a wet blade — rye's sticky surface requires the blade to be rewetted for a clean, unragged cut. Cover with a damp cloth and prove at room temperature until the dough has risen visibly and small cracks appear along the score; rye rises slowly and modestly — look for a surface that has shifted from flat to gently domed.

This is where the bread lives or dies. Bake in the sealed loaf tin in a wood-fired or conventional oven at high heat. The tin must remain sealed throughout baking: the steam trapped inside creates the characteristic dense, even crumb. Open-baked rye collapses. The loaf is done when it has pulled fractionally from the tin walls, the crust is deep mahogany, and a tap on the base returns a hollow sound.

Remove from the tin and cool on a wire rack for a minimum of 12 hours before cutting. The interior of pure rye bread is gummy and unset until fully cooled — cutting early produces a wet, collapsing crumb. The loaf is ready when sliced cleanly without drag and the crumb holds its edge.

Reserve — Stone-milled, whole-grain rye flour from a single Alto Adige or South Tyrolean mill; lievito madre maintained over years with rye feeds only; Speck Alto Adige IGP for service; baked in a wood-fired oven.

Estate — Organic stone-milled rye flour; a mature rye sourdough starter refreshed diligently over several days; whole caraway seeds sourced from a spice merchant rather than a supermarket shelf.

Market — Good-quality commercial dark rye flour; an active sourdough starter converted to rye over two or three refreshes; whole caraway seeds from a reliable grocer.

House — Dark rye flour from any reliable source; a wheat sourdough starter refreshed once with rye flour; standard supermarket caraway seeds. The loaf will be denser and less sour, but remains correct in character.

Sensory Tests
◇Smell. The lievito madre smells sharply, cleanly sour before use — not milky or flat.
◇Touch. The mixed dough holds as a single cohesive mass and releases cleanly from wet hands without tearing.
◇Sight. The surface of the proved loaf has shifted from flat to gently domed, with small cracks developing along the score line.
◇Sound. A tap on the base of the baked, unmoulded loaf returns a clear, hollow knock.
◇Touch. After 12 or more hours of cooling, a slice cuts cleanly without drag and the crumb holds its edge without collapsing.
◇Where it lives or dies. The loaf must bake sealed in its tin throughout: the trapped steam builds the dense, even crumb that defines the bread; open-baked rye collapses.
