Paratha — Layering with Ghee (परांठा — परतें बनाना)

Plain paratha (परांठा) is layered flatbread — atta dough rolled flat, coated with ghee, folded into a book fold or triangle, rolled flat again, cooked on a tawa with generous ghee. The layering technique creates distinct flaky strata in the final bread. There are two primary folding methods: the book fold (tri-fold creating three layers) and the triangle fold (creating a multi-pointed layered wedge). The application of ghee between layers creates a fat-separation barrier that prevents the layers from fusing during cooking, allowing them to separate as flakes when torn. Ghee quality determines the layering's flavour depth.

The Method

Mix flour and salt; create well and gradually add water while mixing until shaggy dough forms.

Knead dough 5 minutes until smooth and elastic; rest 10 minutes under damp cloth.

Divide into 8 equal balls; flatten one between palms into thin disc.

Heat cast-iron tawa or skillet over medium-high heat until smoking gently.

Place paratha on tawa; when bubbles form, flip and drizzle 5ml ghee around edges; flip again.

Crisp both sides, pressing gently with cloth or spatula until light brown spots appear, 2–3 minutes per side.

Transfer to warm plate; repeat with remaining dough.

Serve immediately with curry, raita, or pickled vegetables.

Sensory Tests

◇Where it lives or dies. The moment where paratha lives or dies is the tawa temperature — medium heat, not high. Too hot and the exterior burns before the interior is cooked through (especially important for aloo paratha, where the filling must heat through). Too cool and the paratha is pale and soft. The correct tawa temperature produces a paratha that is brown in spots, slightly crispy on the surface, and fully cooked through in 2-3 minutes per side.
