Pecora al Cotturo nella Pignata Molisana

Molise's ancient shepherds' preparation — mutton (castrated male sheep, pecora) cooked for 5–6 hours in a sealed terracotta pignata (earthenware pot) with wild herbs, garlic, onion, and water only, buried in the embers of a dying fire or placed in a low oven. The result is a meat preparation of extraordinary tenderness and depth — the collagen of the mutton dissolves completely, the herbs permeate every fibre, and the broth is richer than any reduction. The Method

Set the oven to its lowest reliable setting — 130 °C or below. Place the mutton pieces, garlic, onion, dried nepitella, origano selvatico, and rosmarino into a terracotta pignata, then pour over the 500 ml of cold water — the liquid need not cover the meat, because the sealed vessel will hold rising steam against every surface of the mass. Fit the lid firmly.

Mix the flour and 75 ml of water to a stiff dough, then press this paste in a continuous bead around the entire junction of pot and lid, working it into every gap so that no breath of steam can escape as the pot heats. Leave the paste to rest for 20 minutes until it has dried and stiffened to a firm, rigid collar — a gap anywhere will bleed away the trapped herb vapour that slowly permeates the meat and gives the broth its singular character. This is where the dish lives or dies: an imperfect seal releases that steam, extends the cooking time significantly, and cannot be recovered once the pot is in the oven.

Transfer the sealed pignata to the oven and maintain a steady, low heat for 5 to 6 hours without opening or disturbing the pot, because any sudden drop or spike in temperature will stall the slow, even work of the clay and prolong what only patience can achieve. Do not open the oven to check — the pot and the seal manage everything.

At the end of 6 hours, remove the pignata from the oven and bring it to the table still sealed, so that the release of the trapped herb vapour happens in front of those eating and is not wasted in the kitchen. Break the flour crust at the table with a knife; the broth visible beneath should run free and dark, and the meat, when pressed with a spoon, should yield without resistance — structured and tender, not collapsed.

Taste the broth directly from the pot — it should carry depth beyond any conventional reduction, mineral and herbal and faintly of clay, because the sealed hours have driven the aromatics through every fibre of the meat and back out into the liquid. Stir cooked farro or homemade pasta into the broth before serving the meat alongside; the broth demands use.

Reserve — Pecora castrata sourced from a Molise or Abruzzo mountain flock, slaughtered at 2–3 years; wild-gathered nepitella and origano selvatico dried by the cook; a purpose-made Molisan pignata of unglazed terracotta fired with local clay.

Estate — Pecora castrata from a known traditional butcher outside the region; commercially dried wild calamint and wild oregano from a specialist supplier; any unglazed terracotta pot of genuine provenance.

Market — Mature hogget (18–24 months) where pecora castrata is unavailable; dried calamint and oregano from a good Italian delicatessen; any food-safe terracotta pot with a fitting lid.

House — Older bone-in lamb shoulder as a last resort, accepted with the understanding that the texture will not replicate that of mutton; dried Mediterranean herbs from any reliable source; a heavy ceramic casserole with a tight-fitting lid in place of terracotta, accepting the loss of clay's mineral contribution.

Sensory Tests

◇Touch. The flour-paste seal is firm and unbroken — rigid to the finger at every point around the pot-lid junction — before the pignata enters the oven.
◇Sight. The broth visible when the seal is broken runs freely and is deeply coloured — near-brown with dissolved collagen — not pale or watery.
◇Touch. The meat yields to a spoon without pressure, holding its structure rather than collapsing to shreds — structured tenderness is the target, not dissolution.
◇Smell. The vapour released at the breaking of the seal carries concentrated wild herb, garlic, and a faint mineral note of clay — the trapped aromatic environment of 6 hours.
◇Where it lives or dies. The flour-paste seal must be continuous, airtight, and fully set before the pot enters the oven — a broken seal collapses the pressurised steam environment and with it the entire logic of the preparation.
