Tet Nguyen Dan — the Vietnamese Lunar New Year — is the most important celebration of the Vietnamese calendar, and food is central to its observance. Pho bo (beef pho) made at home for Tet is distinguished from the everyday restaurant bowl by the care and quality invested in the broth: the bones simmered for 12 hours, the aromatics charred to perfection, the meat and garnishes carefully prepared.
