Puzzone di Moena Fonduto con Pane di Segale e Speck

Puzzone di Moena DOP — Trentino's pungent washed-rind mountain cheese, known locally as 'Spretz Tzaorì' (sour cheese in Ladin dialect) — is sliced and melted in a small terracotta ramekin or cazuela in a hot oven (200°C) for 8–10 minutes until molten, bubbling and forming a light brown crust on the surface. It is brought to the table immediately in the ramekin, alongside slices of thin toasted rye bread (pane di segale) and wafer-thin slices of local Speck Alto Adige IGP. The Puzzone is scooped onto the bread, the speck layered over; the sharp, strong flavour of the washed-rind cheese against the smoky, salt-cured ham and the earthy rye bread forms one of the Alps' most direct and satisfying flavour combinations.

The Method

Heat the oven to 200 °C. Arrange the sliced Puzzone di Moena DOP in four individual terracotta or cast-iron ramekins in an even layer. The cheese must be at room temperature before it enters the oven; cold cheese melts unevenly and the edges scorch before the centre is molten. If using dried alpine herbs, scatter them over the cheese now. The ramekins are ready to enter the oven when the cheese feels pliable and no longer cold to the touch.

Place the ramekins in the hot oven and bake for 8–10 minutes. This is where the dish lives or dies: the oven must be genuinely hot and the cheese must remain until it is fully molten, actively bubbling, and has formed a light brown crust across its surface. A moderate oven yields only greasy melted cheese; removing the ramekins at the first sign of bubbling, before the crust develops, sacrifices the caramel bitterness that is essential to the dish's character. The correct moment is unmistakable — the surface is visibly browned and the cheese heaves in the ramekin.

While the cheese bakes, toast the rye bread slices until fully dry and crisp. Soft bread collapses immediately under molten cheese; the bread must be rigid enough to carry a generous scoop without bending. Set the toasted slices and the room-temperature speck alongside the ramekins on the serving board or plate. Do not heat the speck — warming renders its fat and destroys the textural contrast it provides against the molten cheese.

Remove the ramekins from the oven and bring them to the table immediately — within 60 seconds. Terracotta and cast-iron continue to cook the cheese after removal; this residual heat is an asset, not a risk, provided service is not delayed. If using chestnut honey, drizzle it over the molten cheese at this moment. The dish is served in the ramekin: the diner scoops the Puzzone onto a slice of toasted rye bread and lays speck over the top.

Sensory Tests

◇Touch. The cheese slices feel pliable and no longer cold before entering the oven — room temperature throughout.
◇Sight. The surface of the cheese in the ramekin is actively bubbling and carries a distinct light brown crust before the oven door is opened.
◇Touch. The toasted rye bread is fully rigid — it does not flex when held at one end — before it is brought to the table.
◇Smell. A sharp, barnyard-funky aroma fills the room as the ramekins leave the oven; the caramel note of the browning crust is present beneath it.
◇Where it lives or dies. The cheese must remain in a genuinely hot oven (200 °C minimum) until fully molten, actively bubbling, and carrying a light brown crust — a moderate oven or premature removal produces greasy, flavourless melt with none of the caramel bitterness the dish requires.
