Räksmörgås (Swedish Prawn Toast)

Sweden's iconic open-faced prawn sandwich is a generous mound of cold-water prawns (räkor) piled onto buttered white bread with mayonnaise, dill, lemon, and a garnish of hard-boiled egg — a construction that looks simple but depends entirely on the quality of the prawns, which should be tiny, sweet, cold-water Scandinavian shrimp rather than warm-water varieties. The räksmörgås is the canonical Swedish seaside lunch — eaten in restaurant-cafés overlooking Stockholm's archipelago in summer, with cold beer and sunshine. The white bread is often toasted, the mayonnaise slightly lemony, and the dill fresh rather than dried. The proportion of prawn to bread is deliberately excessive — a proper räksmörgås uses 150–200g of peeled prawns on a single slice of bread.

The Method

Hard-boil the eggs, cool them fully in cold water, peel, and slice. The prawns and all components must be cold before assembly begins; warm prawns at any stage render the dish incorrect.

Place the peeled prawns in a bowl. Squeeze lemon juice over them and add the mayonnaise. Fold together with a light hand — the prawns should be lightly dressed, not submerged. The mayonnaise is a seasoning; if it threatens to become the dominant presence, there is too much. Rest the dressed prawns for no more than 5 minutes before proceeding; extended acid contact alters the surface texture of the shrimp.

Toast the white bread until it is pale gold and firm enough to carry the load without immediately softening. Butter each slice generously while still warm. The butter creates a partial barrier between bread and prawn moisture.

Pile the dressed prawns onto each buttered slice without restraint — 150–200 g per slice is the correct proportion. The aesthetic is one of abundance; a flat or sparse pile is wrong. Arrange sliced hard-boiled egg across the top and strew generously with fresh dill fronds. Serve immediately. The räksmörgås must be eaten within 20 minutes of assembly; the bread absorbs moisture from the prawns and the construction fails.

Estate — High-quality pre-cooked, shell-on cold-water Atlantic or North Sea shrimp, bought from a fishmonger and peeled at home just before dressing.

Market — Good-quality pre-peeled cold-water shrimp from a reputable fishmonger or supermarket fish counter, kept cold and used on the day of purchase.

House — Packaged pre-peeled cold-water shrimp from the chilled aisle — acceptable provided they are genuinely cold-water varieties; the label must confirm Atlantic or North Sea origin.

Sensory Tests

◇Touch. Prawns are cold to the hand throughout — room temperature at any point is not acceptable.
◇Sight. The dressed prawns glisten lightly; they are coated, not pooled in sauce.
◇Smell. Fresh dill fronds release a bright, volatile fragrance when torn — absent with dried dill, which signals an inferior result.
◇Sight. The finished sandwich shows a generous, domed mound of prawns overhanging the bread on all sides — abundance is the correct appearance.
◇Where it lives or dies. The dish lives or dies on the prawns: cold-water Atlantic or North Sea shrimp, cold, lightly dressed — the right species properly handled is the entire point; warm-water prawns or heavy mayonnaise make the Swedish coastal flavour impossible to achieve.
