The Method

Slit each red date once along its length with a small knife, exposing the flesh. Rinse the dates, dried longan flesh, and goji berries under cold water. Place all three in a medium pot with the water.

Bring the pot to a gentle simmer over medium heat, then reduce immediately to low. The surface should show only a quiet, occasional bubble — never a rolling boil. This is where the dish lives or dies: a rapid boil will cloud the broth and muddy both colour and flavour beyond recovery.

Simmer on low for 20–30 minutes, uncovered. The broth will deepen to a clear amber-red; the dates will have softened and opened, releasing their full sweetness into the liquid. The fragrance of longan — sweet and faintly musky — should be clearly present above the pot.

Add the rock sugar and stir gently until fully dissolved. Taste: the soup should be gently, cleanly sweet with no harsh edge. Adjust with a little more rock sugar if required.

Ladle into bowls, ensuring each portion receives dates, longan, and goji berries. Serve warm. The broth should be translucent amber, not opaque.

Reserve — Whole dried red dates from Xinjiang or Shandong; premium sun-dried longan flesh from Fujian or Guangdong; hand-selected goji berries from Ningxia; old-fashioned lump rock sugar (bing tang).

Estate — Good-quality Chinese-grocery dried dates, well-fleshed and deeply coloured; packaged dried longan from a reputable Chinese supplier; standard Ningxia goji berries; rock sugar in standard lump form.

Market — Any sound dried red dates available; dried longan flesh sold in sealed packets at Asian supermarkets; commercial goji berries; rock sugar broken from a block.

House — Dates without slitting will contribute less flavour; white sugar may substitute for rock sugar with some loss of tonic character.

Sensory Tests
◇Sight. Broth is clear amber-red, not cloudy or opaque — clarity is the mark of a correct simmer.
◇Sight. Dates have visibly opened along their slits and softened, their flesh yielded into the liquid.
◇Smell. A sweet, faintly musky longan fragrance rises from the pot after 20 minutes of simmering.
◇Taste. Sweetness is gentle and clean with no sharpness; rock sugar has fully dissolved and integrated.
◇Where it lives or dies. The soup must never exceed a quiet simmer: a rolling boil clouds the broth irreversibly and collapses the clarity that defines the dish.
