Ribollita — Tuscan Bread and Bean Soup
Ribollita — 'reboiled' — is the iconic Tuscan cucina povera of bean-and-bread soup cooked once, cooled, then reheated (reboiled) the next day until it thickens to a mass that holds its shape on a ladle. At that stage it is sometimes fried in a thin layer in a pan with olive oil, browning the underside like a savory bread cake. The defining vegetables are cavolo nero (Tuscan black kale), cannellini beans, and stale bread — and the flavour depends entirely on the quality of all three.

The Method

Heat 60ml oil in a heavy pot; soften onions, carrots, and celery over medium heat for 10 minutes, stirring frequently.

Add garlic and cook 2 minutes; pour in tomatoes, stock, thyme, and bay leaf, bring to simmer.

Add cavolo nero and beans; simmer 20 minutes until greens are tender.

Stir in bread cubes, breaking them as they soften; cook 15 minutes, stirring occasionally, until soup is thick and bread dissolves partially.

Season carefully with salt and Tellicherry pepper; discard thyme and bay leaf.

Ladle into bowls, finish with best-quality extra-virgin olive oil and additional pepper.

◇Where it lives or dies. The moment where ribollita lives or dies is the second boil — the overnight-chilled soup, now a thick, stiffened mass, goes back on the heat with a splash of water. As it heats, stir from the bottom to prevent scorching. The bread absorbs the last of the liquid and the soup becomes, in Marcella Hazan's description, something you could stand a spoon in. This is correct. The ribollita should hold a mound shape in the bowl. Drizzle with new-season Tuscan oil — this is the moment of transformation.
