Risotto al Gorgonzola e Noci

Lombardy's pairing of Gorgonzola DOP (specifically the piccante variety) with walnut in risotto — a combination that originated in Novara and Vercelli, the rice-growing provinces. Gorgonzola is added in two stages: a small amount stirred in during the mantecatura (finishing), and a larger piece placed on top and allowed to melt at table. The walnut provides textural contrast and a tannin-bitter note that cuts the richness of the cheese. Acacia honey drizzled at service bridges sweet-sour-bitter. The Method

Melt half the butter in a wide, heavy-based pan over medium heat. Add the onion and sweat without colour until soft and translucent, so that no raw sharpness from the onion carries into the finished risotto. The onion must give no resistance to the back of a spoon.

Add the Carnaroli rice and stir to coat every grain in the butter, toasting briefly until the edges of the grains turn opaque — this builds a light shell around each grain so it absorbs stock gradually and holds its shape through the long cook. Pour in the white wine and stir until it has been fully absorbed and no raw alcohol is detectable on the nose.

Begin adding the hot stock one ladle at a time, stirring steadily and allowing each addition to be absorbed before the next, because a continuous gentle abrasion coaxes the starch from the grain's surface to build the creamy binding the dish depends on. Maintain a vigorous simmer and continue until the rice is cooked through but retains a very slight resistance at the core — approximately 16 to 18 minutes in total.

This is where the dish lives or dies. Remove the pan from the heat entirely, then add the remaining cold butter cubes and the mascarpone so they melt into the rice slowly and evenly rather than splitting on a hot surface, followed by 120 g of the Gorgonzola piccante broken into pieces. Fold vigorously but without over-working: the result must be all'onda — fluid enough to flow in a slow wave when the pan is tilted — silky and uniform, not gummy or stringy, for over-stirring at this stage creates a broken texture that cannot be corrected.

Plate immediately into four warmed shallow bowls, setting one reserved piece of Gorgonzola piccante on top of each portion so it melts gradually from the residual heat of the risotto rather than collapsing into it in the kitchen. Carry to the table at once; the cheese will be perfectly softened within two to three minutes of service.

Scatter the hand-broken raw walnuts over each bowl at the moment of service and drizzle acacia honey lightly. The walnuts must not be added earlier — heat dulls their milky fat and destroys the textural contrast that is the purpose of their presence.

Reserve — Gorgonzola piccante DOP from a named Novara or Vercelli affineur, aged at least 90 days; Carnaroli from a single estate in the Vercelli or Pavia rice belt; walnuts freshly cracked from whole shells within 24 hours of service.

Estate — Gorgonzola piccante DOP from a recognised Lombard producer; Carnaroli of declared harvest year; walnuts vacuum-packed and within their use date.

Market — Any certified Gorgonzola piccante DOP; standard Carnaroli from a reliable Italian importer; good-quality shelled walnuts from a high-turnover retailer.

House — Gorgonzola dolce is a common but inferior substitution — it lacks the blue character the dish requires and its excess creaminess unbalances the mantecatura; Arborio rice may be used but gives a starchier, less distinct result.

Sensory Tests

◇Sight. Onion is fully translucent with no golden colouring before the rice is added.
◇Smell. White wine has been absorbed completely and no sharp alcohol rises from the pan before the first stock addition.
◇Touch. A grain of rice pressed between thumb and forefinger shows a just-disappearing white core — cooked through with the faintest resistance.
◇Sight. The finished risotto flows as a single slow wave — all'onda — when the pan is tilted; it neither holds a stiff mound nor runs like soup.
◇Sight. The reserved Gorgonzola piece on top has softened and begun to collapse and seep into the surface of the risotto at table — the signal that service is at the correct moment.
◇Where it lives or dies. The mantecatura off heat is the decisive act: Gorgonzola added to a pan still on the heat separates and turns oily; butter and cheese folded vigorously into resting rice produce the all'onda silkiness that defines the dish.
