Risotto alla Pilota Mantovana

A risotto from Mantova named after the rice-hullers (piloti) who worked the Po Valley paddies — made without constant stirring, unlike a standard risotto. A precise volume of water is brought to a boil, rice is poured in pyramid fashion, covered tightly, and allowed to steam-cook undisturbed. Finished off heat with butter and aged Grana Padano. Served with coarse-crumbled pork sausage (salamella) fried separately.

The Method

Remove the sausage casing and crumble the salamella coarsely by hand into uneven pieces, keeping them irregular so they crisp unevenly and give textural contrast at the table. Place in a cold dry frying pan and set over medium heat, starting cold so the fat has time to render gradually rather than seizing on contact with a hot surface. Fry without added fat until no moisture remains in the pan and the morsels are deeply coloured, firm, and crisp; remove from the heat and hold warm.

Measure the water with precision — 480 ml for 400 g of rice — because Vialone Nano will absorb exactly what is given and no more, leaving no excess to drain away and dilute the starch. Bring to a full rolling boil in a heavy-based saucepan with a tight-fitting lid, add the salt, then pour all the rice in a single conical mound into the centre of the boiling water, pressing the peak just clear of the surface so the grain hydrates from the base upward at a controlled rate. This is where the dish lives or dies: do not stir, reduce the heat immediately to its absolute minimum, and cover the pan tightly; the mound must hold its shape and the water must be visibly absorbed at the base within the first moments.

Cook entirely undisturbed, lid on, over minimum heat until the water is fully absorbed into the grain — lifting the lid at any point releases the trapped steam that is doing half the cooking work. The cue that the rice is ready: no sound of simmering liquid remains, only a faint hiss of steam pressing against the lid.

Remove the pan from the heat entirely and leave it covered and undisturbed for 10 minutes, so the residual steam locked inside the pan finishes swelling each grain to its centre without any risk of the base catching. Do not lift the lid during this rest. After 10 minutes, tilt the lid briefly: it should release only a thin final breath of steam with no water dripping back onto the rice.

Uncover the pan and add the cold butter cubes and the grated Grana Padano directly onto the rice, using cold butter deliberately so it melts slowly into the hot starch and emulsifies into a creamy, cohesive mass rather than vanishing instantly as grease. Fold vigorously with a wooden spoon or spatula, working off the heat entirely throughout, until the mass moves as one glossy body with no separate pools of butter visible.

Divide the risotto into four warmed shallow bowls or plates and scatter the crisp salamella morsels over the top. Serve immediately; the rice should hold its shape for a moment before slowly settling — firm enough to mound, creamy enough to spread gently at the edges.

House — The dish requires Vialone Nano — substitution with Arborio changes the absorption ratio and requires more liquid, producing a different result. Grana Padano may be replaced by a mild, lactic hard cheese at a minimum. The method is not negotiable at any rung.

Sensory Tests

◇Sight. The conical mound of dry rice stands with its peak clear of the water surface immediately after pouring — confirming the correct water-to-rice ratio.
◇Sound. The sound of liquid simmering against the pan base ceases; only faint steam pressure against the lid remains — confirming full water absorption before the off-heat rest.
◇Touch. The lid releases only a thin, dry breath of steam after the 10-minute rest — confirming the steam phase is complete and the rice is fully cooked through.
◇Sight. After mantecatura, the rice mass moves as a single glossy body with no separate pools of melted butter — confirming proper emulsification off heat.
◇Where it lives or dies. The rice must be poured into the boiling salted water as a single conical mound and never stirred thereafter — any intervention with the grain from this point destroys the structural integrity the pilota method is built upon.
