Sambal kecap — kecap manis mixed with sliced bird's eye chilli, sliced shallot, and a squeeze of lime. Made in 2 minutes, served alongside sate, fried tofu, bakso, and dozens of other preparations. This is not a "sambal" in the pounded sense — it is an ASSEMBLY. The kecap provides sweet-savoury, the chilli provides heat, the shallot provides pungency, the lime provides acid. The Method

Pour the kecap manis into a small serving bowl or shallow dish. The sauce should pool evenly — it moves slowly, with the viscosity of a light syrup.

Scatter the sliced bird's eye chilli and sliced shallot directly into the kecap manis. This is where the dish lives or dies: the chilli must be sliced, not crushed, and the shallot must be sliced, not minced — both elements must retain their raw bite and structural presence in the sauce, not dissolve into it.

Squeeze the lime over the assembled bowl. The acid should be perceptible as a distinct top note when the condiment is tasted — neither buried by the kecap nor dominant over it.

Market — Standard supermarket kecap manis; fresh chillies and shallots; bottled lime juice used with restraint.

House — Any sweet soy sauce in the absence of kecap manis, adjusted for sweetness; dried chilli flakes and pre-sliced shallot; lime juice from concentrate.

Sensory Tests
◇Sight. Sliced chilli rounds and shallot rings are distinct and visible, floating or resting in the dark kecap manis — no blurring of elements.
◇Smell. The raw shallot and chilli give a sharp, green-pungent lift above the molasses-soy base of the kecap manis.
◇Touch. The sauce coats a spoon in a thin, lightly syrupy film — it should not run off like water nor cling like a thick glaze.
◇Where it lives or dies. The chilli and shallot must be sliced and left raw, retaining individual texture and bite; any crushing or fine mincing collapses the four-element structure the condiment depends upon.
