Sanglier Rôti au Four — Roasted Wild Boar Leg

Whole leg of Sus scrofa (wild boar) marinated 24 hours in Corsican red wine, Allium sativum, Juniperus communis berries, Rosmarinus officinalis, Thymus, sea-mineral-salt, and Olea europaea. Drained, patted dry, rubbed with rendered Porcu Nustrale lard, and roasted at 170°C for 2.5–3 hours per kg, basting every 30 minutes with strained marinade. The marinade is reduced and used as a jus. Juniperus communis berries are the flavour signature — they cut through gaminess with a resinous note connecting meat to the maquis.

The Method

Combine the Corsican red wine, crushed garlic, bruised juniper berries, rosemary, thyme, sea salt, and olive oil in a non-reactive vessel large enough to hold the boar leg. Submerge the leg fully. Cover and refrigerate for a minimum of 24 hours; 36 hours is preferred. The marinade is doing its essential work: the gaminess cannot otherwise be corrected.

Remove the leg from the marinade. Reserve the marinade entirely. Pat the leg thoroughly dry with clean cloth — surface moisture will impede crust formation. Rub the leg on all sides with rendered Porcu Nustrale lard. Do not use olive oil: it will burn before the boar is cooked through.

Strain the reserved marinade through a fine sieve, discarding all solid herb matter. Herb matter left in the basting liquid will scorch on the roasting surface and turn acrid. Reserve the strained liquid.

Preheat the oven to 170°C. Place the leg on a rack set in a roasting pan. Roast at 170°C, calculating 2.5 to 3 hours per kilogram of leg weight. Every 30 minutes without exception, baste the surface with the strained marinade. This is where the dish lives or dies: consistent basting at low temperature builds the dark lacquered crust and prevents the boar from drying and toughening; roasting above 180°C or basting infrequently cannot be recovered from. The surface is ready at each interval when it glistens and deepens in colour rather than drying or paling.

Pour the remaining strained marinade into a small saucepan. Reduce over medium heat until the liquid is dark, mahogany in colour, and lightly syrupy. In the final 5 minutes of reduction, add the Mirto di Corsica berry liqueur. Remove from heat when the jus is glossy and concentrated — taste should show gamey depth, resinous juniper, and integrated wine.

Remove the leg from the oven. Rest uncovered for a minimum of 20 minutes before carving. The interior juices must redistribute: carving without resting yields a dry, tough result. The leg is ready to carve when the crust holds firm to the touch yet the flesh yields slightly under light pressure at the thickest point.

Carve across the grain. Serve with the Mirto-finished jus passed separately. The aroma at the table should carry juniper, thyme, and concentrated game — a sour or sharp note indicates under-marinating or unbalanced acid.

◇Sight. Dark lacquered mahogany crust on the leg surface after each basting interval; pale or dry surface signals insufficient basting or oven temperature too low
◇Smell. Juniper, thyme, and concentrated game rising from the roasting pan; a sour or sharp note indicates under-marinating or acid imbalance in the marinade
◇Touch. Leg yields slightly under light pressure at the thickest point after resting; resistance indicates resting was cut short or oven ran too hot
◇Where it lives or dies. The dish lives or dies in the oven: 170°C held without variance, basting every 30 minutes with strained marinade, sustained across the full roasting time — no single deviation can be corrected once the boar has dried or toughened.
