The Method

Place the cleaned offal in the spiced broth with turmeric, lemongrass, kaffir lime leaves, and salt. Bring to a simmer and cook until each piece is fully tender and yields without resistance when pressed. Remove the offal and reserve the broth; discard the aromatics. Allow the offal to cool, then cut into 2 cm cubes.

Thread the offal cubes onto the soaked bamboo skewers, three to four pieces per skewer, keeping pieces compact and even so they will grill uniformly.

Grill the skewers over charcoal, turning once, until the surfaces are marked and lightly charred at the edges and the exterior feels firm under light pressure. The interior, already cooked, requires only surface colour.

Return the reserved spiced broth to the heat. Whisk in the rice flour paste in a slow, steady stream, stirring constantly. This is where the dish lives or dies: the rice flour must be incorporated without lumps and cooked out fully until the sauce is thick, pourable, and turmeric-yellow — a viscous, roux-adjacent consistency that coats the back of a spoon heavily and does not taste of raw flour. It will set further as it cools; serve it while it is still fluid enough to pour.

Arrange the grilled skewers on a plate and pour the hot turmeric sauce generously over them, coating the skewers completely. The sauce should not sit beside the sate as a condiment; it must envelop the skewers entirely.

Reserve — Cattle tongue from a single-breed Minangkabau-region animal, with freshly milled rice flour and turmeric lifted minutes before grating; grilled over coconut-shell charcoal for its clean, high heat.

Estate — Mixed offal (tongue and heart prioritised) from a traceable halal butcher; fresh turmeric root, rice flour from an Asian specialist miller; good hardwood charcoal.

Market — Commercially sourced beef offal, cleaned and trimmed at purchase; dried turmeric powder acceptable though the sauce will be less vivid; standard rice flour; charcoal grill.

Sensory Tests

◇Touch. Boiled offal yields completely without resistance when pressed between two fingers — no rubbery spring remains.
◇Sight. The rice flour sauce is a uniform, opaque turmeric-yellow with no white streaks or lumps visible.
◇Smell. The sauce smells of cooked turmeric and broth, not of raw starch.
◇Sight. The finished dish shows skewers fully enveloped in sauce, not merely daubed — sauce should pool slightly at the base of the plate.
◇Where it lives or dies. The rice flour sauce must be stirred without pause from the moment it enters the hot broth; a lumped or raw-tasting sauce cannot be corrected at the table and disqualifies the dish.

What to Pour

A young, slightly sweet iced tea or a lightly sparkling tamarind drink; the turmeric-rich, starchy sauce calls for a beverage with enough acidity or sweetness to cut through the viscosity without competing with the spice. If a fermented option is sought, a very dry, high-acid sparkling water with a wedge of lime serves the same function.
