Sausage and Peppers

Italian sausage links (sweet, hot, or mixed) browned in a skillet, then combined with sliced bell peppers and onion in the rendered sausage fat, simmered with a splash of water or wine until the peppers are soft, the onion is translucent, and the sausage is cooked through. The peppers should be soft and slightly caramelised, not crunchy. The onion should be sweet and melted. The sausage should be juicy with a browned exterior.

The Method

Set a wide, heavy skillet over medium-high heat. Add the sausage links and brown them on all sides in their own rendering fat, turning as needed. The sausage is ready to move on when the exterior is deeply coloured and a substantial fond has formed on the floor of the pan.

Remove the browned sausages and set aside. Add the sliced peppers and onion directly to the rendered sausage fat in the pan — no fresh oil. Cook over medium heat, stirring occasionally, until the onion begins to turn translucent and the peppers show the first signs of softening at their edges.

Return the sausages to the pan. Add the water or wine, scraping up the fond. Reduce the heat, cover loosely, and simmer. This is where the dish lives or dies: the peppers must cook until they are completely soft and slightly caramelised, the onion sweet and melted into the mass, and the sausage cooked through and still juicy — crunchy peppers mean the dish is not finished.

Taste the pan juices and adjust seasoning. The fennel seed carried inside the sausage should be detectable throughout. Serve in a split Italian roll with the peppers and onions piled over, over penne or rigatoni with the juices as sauce, or on a bed of soft polenta with the pan juices ladled over.

◇Sight. The sausage exterior is deep brown and a distinct fond coats the pan floor before the vegetables are added.
◇Sight. The onion is fully translucent and collapsed; the peppers have lost their raw sheen and show light caramelisation at their edges.
◇Touch. A pepper strip pressed between thumb and finger offers no resistance — it is completely soft, not al dente.
◇Smell. The scent of fennel seed rises clearly from the pan throughout the simmer, confirming the sausage's seasoning is integrating with the vegetables.
◇Where it lives or dies. The peppers must reach complete softness and a light caramelisation before the dish is served; pulling them from the heat while still crunchy is the one failure this dish does not forgive.
