Scamorza Abruzzese alla Brace — Grilled Smoked Cheese from Abruzzo

Scamorza abruzzese is the stretched-curd (pasta filata) cheese of the Abruzzo interior — made from whole cow's milk, shaped into the characteristic pear with a narrow neck (smaller than caciocavallo), and either left fresh (bianca) or lightly smoked over hay or straw for 24-48 hours (affumicata). The smoked version, grilled on a cast-iron grill or directly on embers until the exterior chars and blisters and the interior becomes molten, is the definitive Abruzzese antipasto — served whole or halved, the melted cheese running from the cuts. It is one of those preparations where the technique (high-heat grilling of a specific cheese) produces a result completely different from any other cooking method.

The Method

Remove the scamorze from refrigeration at least one hour before grilling. The cheese must reach room temperature throughout; a cold centre will remain solid while the exterior burns. Press the centre of each cheese with a fingertip — it should yield uniformly, with no cold, firm core.

Bring a cast-iron grill, griddle, or live wood embers to intense heat. The surface is ready when a drop of water evaporates on contact within one second. Place each scamorza whole — or halved crosswise if preferred — directly on the grill. Do not move them. After 2–3 minutes, visible charring will appear on the underside and the cheese will begin to swell and blister. The surface darkens and the smell shifts from warm milk to char and smoke: this is where the dish lives or dies — insufficient heat now will steam rather than grill the cheese, and the charred-bitter exterior that balances the molten interior will not form.

Turn each scamorza once, using tongs or a wide spatula. Grill the second side for a further 2–3 minutes. The exterior should be dark, blistered, and slightly charred on both faces; the body of the cheese will have swollen noticeably and the interior, when the cheese is pressed lightly at its equator, will feel completely liquid.

Transfer immediately to warmed plates. Serve whole or cut at the table — the molten interior runs from the cut. Arrange prosciutto d'Abruzzo and toasted bread alongside. Set a lemon wedge on each plate; the juice is squeezed over the charred surface at the table. The cheese stiffens within three minutes of leaving the heat; it waits for no one.

Reserve — A whole scamorza affumicata from a single-herd Abruzzese producer, smoked for the full 24–48 hours over hay or straw, grilled over live wood embers in the open air.

Estate — A certified scamorza affumicata from Abruzzo, Molise, or Campania — DOP or named-producer — grilled on a seasoned cast-iron grill over the highest possible domestic heat.

Market — A good commercial scamorza affumicata from a reputable Italian cheesemaker, grilled on a very hot cast-iron griddle with excellent colour and char.

House — Any widely available smoked scamorza (never fresh scamorza bianca, which lacks the requisite smoky complexity), grilled as hot and as briefly as the equipment permits.

Sensory Tests

◇Touch. The cheese at room temperature yields uniformly under a fingertip — no cold, firm core remains.
◇Sight. The exterior is dark, blistered, and charred on both faces; the body of the cheese has swollen visibly.
◇Smell. The aroma shifts from warm milk to a combination of char and the cheese's own affumicatura — smoke laid over smoke.
◇Touch. Light pressure at the equator of the cheese meets no resistance — the interior is entirely liquid.
◇Where it lives or dies. Intense, uninterrupted contact heat in the first two to three minutes is the line the dish cannot cross: too low a temperature produces steamed cheese with no charred exterior, and the bitter-sweet contrast that defines scamorza alla brace is lost entirely.
