Sformato di Ricotta e Erbe Selvatiche Friulano

Baked ricotta and wild herb timbale from Friuli — a spring preparation using freshly foraged wild herbs (wild garlic, young nettles, sorrel, chives, and borage) combined with fresh sheep's or cow's milk ricotta and eggs into a baked sformato (moulded savory flan). The herbs are blanched briefly and squeezed, then chopped and folded into the ricotta-egg mixture. Baked in individual ramekins in a bain-marie. Served as a starter on a pool of blended herb oil. The wild herbs make this emphatically a spring dish; cultivated herbs produce a mild but less character-filled result.

The Method

Drain the ricotta through a fine sieve for 1 hour. Meanwhile, bring a large pot of salted water to a rolling boil. Blanch the wild garlic, nettles, sorrel, chives, and borage in batches — each for 30 to 60 seconds. Transfer immediately to iced water to arrest cooking. Squeeze each herb firmly in the hands until completely dry; no moisture should be released when pressed. Finely chop all blanched herbs together. The mass should feel almost dry to the touch.

Prepare the herb oil: blend the blanched parsley and chives with the olive oil until smooth and vivid green. Pass through a fine sieve; discard solids. Reserve at room temperature. The oil should run freely and hold an intense, unbroken green colour.

Preheat the oven to 160 °C. Lightly butter four individual ramekins (approximately 150 ml capacity). In a bowl, beat the drained ricotta with the eggs until smooth and homogenous. Fold in the chopped herbs. Season with salt and white pepper. The mixture should be thick, cohesive, and hold its shape briefly when spooned — not pourable.

This is the step on which the dish lives or dies: fill the prepared ramekins to within 5 mm of the rim. Set them in a deep baking dish and pour hot water into the dish to reach halfway up the ramekins. Verify with a thermometer that the bain-marie water is barely simmering at 80 °C before the dish enters the oven and throughout cooking. Water above 80 °C will scramble the eggs and destroy the texture. Bake for 25 to 30 minutes. The sformato is done when the edges are fully set and the centre yields only a faint, slow tremor when the ramekin is gently shaken.

Remove the ramekins from the bain-marie and rest on a rack for 5 minutes. Do not unmould before this interval; the proteins must set fully or the sformato will collapse. Run a thin knife around the inside edge of each ramekin. Invert onto a warm plate with a decisive motion. The sformato should release cleanly and hold its moulded shape.

Spoon herb oil in a pool around each unmoulded sformato. Garnish, if available, with wild garlic flowers. Serve immediately — the sformato holds its heat briefly.

Estate — Wild herbs sourced from a trusted forager or specialist market; a good-quality fresh cow's milk ricotta from a local dairy, drained for the full hour.

Market — A mix of foraged and cultivated herbs — cultivated sorrel and chives supplementing whatever wild material is available; good supermarket fresh ricotta, well drained.

House — All cultivated herbs — flat-leaf parsley, spinach, chives — in place of foraged material; standard supermarket ricotta. The dish becomes mild and less characterful but the technique remains valid.

Sensory Tests

◇Touch. Blanched, squeezed herbs release no moisture when pressed firmly in the hand — they are ready to fold into the ricotta.
◇Sight. The bain-marie water shows only a faint, intermittent surface movement — a bare simmer at 80 °C, not a rolling boil.
◇Sight. The edges of the sformato are fully set and opaque; the centre gives only a slow, unified tremor when the ramekin is shaken — cooking is complete.
◇Touch. After 5 minutes of resting, the sformato pulls cleanly from the ramekin wall when a knife is drawn around it and holds its shape on the plate without slumping.
◇Where it lives or dies. The bain-marie must be held at a bare simmer of 80 °C throughout baking; water above this temperature scrambles the egg and the sformato cannot be saved.
