The Method

Simmer the pork skin in water until it yields a concentrated, collagen-rich stock. Strain, cool, and refrigerate until firmly set. Cut the resulting jelly into small, uniform dice. The aspic quantity is slightly reduced relative to standard xiao long bao — the crab fat will contribute additional liquid under heat. The aspic is ready when it holds a clean edge when cut and does not slump at room temperature.

Extract the roe (xie huang) from the female hairy crabs and the fat (xie gao) from the male crabs. Handle without crushing. Many chefs combine both: the orange roe provides colour; the white creaminess of the male fat provides depth. Only fresh, live hairy crab yields the correct melting richness — frozen crab is not a substitute. The combined xie fen should be visibly orange-tinged and aromatic with iodine and sweetness.

Combine the ground pork with the extracted xie fen, Shaoxing rice wine, light soy sauce, grated ginger, and salt. Fold in the diced aspic. Do not overmix, and do not overfill the wrappers — the crab fat renders the filling more fluid than a standard pork mixture, making overfilled dumplings prone to breakage. The filling is correct when it holds together but feels noticeably looser and more unctuous than plain pork filling.

Add the boiling water gradually to the flour, working to a smooth, pliable dough. Rest, covered, until fully relaxed. Roll portions into thin rounds — thin enough that the orange tint of the xie fen filling is faintly visible through the dough when held to the light. This translucency is both a craft marker and the visual signal that the wrapper is at the correct thickness.

This is where the dish lives or dies. Pleat each wrapper to a minimum of 18 folds, sealing the crown tightly so no soup can escape during steaming. The xie fen version demands maximum craft attention: a loose or poorly sealed pleat will allow the more fluid crab filling to breach the wrapper under heat. The finished dumpling should stand upright with a neat, gathered topknot that shows no gaps.

Arrange the dumplings in a bamboo steamer lined to prevent sticking. Steam over vigorously boiling water for 6–7 minutes. Do not extend the steaming time beyond 7 minutes — the thin wrapper and fluid filling require no more. The dumplings are ready when the wrappers are set, slightly translucent, and the filling is visibly swollen with liquid soup.

Allow 90 seconds before eating. The xie fen filling retains heat more intensely than a standard pork filling. Serve immediately with the Chinkiang vinegar and ginger dipping sauce. The vinegar is essential: it cuts the extraordinary richness of the crab fat and roe. Bite a small hole in the wrapper; drink the soup first.

Reserve — Female hairy crabs at peak season (October) for xie huang of maximum density and colour; male crabs of equal season for xie gao; crab fat extracted to order and used within the day.

Estate — Live hairy crabs from a named lake source (Yangcheng Lake being the most celebrated); both sexes used together; aspic made from free-range pork skin.

Market — Live hairy crabs of verified freshness from a reliable autumn market; roe and fat combined in the filling; competent pleating of 18 folds.

House — Fresh hairy crab only — no frozen substitution is possible at this rung; the dish does not exist in a degraded crab-quality version. If fresh crab is unavailable, make standard xiao long bao.

Sensory Tests
◇Sight. The orange tint of the crab filling is faintly visible through the wrapper when held to the light — the wrapper is at correct thinness.
◇Sight. The finished dumpling stands upright with a neat topknot of a minimum 18 pleats showing no gaps or tears at the seal.
◇Sight. After 6–7 minutes of steaming, the wrapper is set and slightly translucent, and the filling has visibly swollen with liquid.
◇Touch. The diced aspic holds a clean edge and does not slump at room temperature — the collagen concentration is sufficient.
◇Smell. The combined xie fen is immediately aromatic with iodine and sea-sweetness — the cue that the crab was live and fresh.
◇Where it lives or dies. The pleat seal decides the dish: a loose or under-pleated crown allows the more fluid crab filling to breach the wrapper under steam, and the soup is lost before it reaches the bowl.
