Sichuan Husband and Wife Beef (Fu Qi Fei Pian)

Fu qi fei pian (husband and wife beef offal): thinly sliced beef offal (heart, tongue, tripe) and lean beef, dressed in a complex ma la sauce — sesame paste, chili oil, Sichuan pepper oil, black vinegar, soy, sugar, and garlic. Served cold. Named after a Chengdu couple who sold the dish from a street cart in the 1930s. One of Sichuan's most celebrated cold dishes.

The Method

Clean all offal with rigour. Blanch heart, tongue, and tripe separately in boiling water, discard the water, then scrub each piece with coarse salt and vinegar. Repeat the blanching at least twice. The water must run clear and the offal must carry no residual odour before proceeding.

Simmer heart, tongue, tripe, and brisket separately — each cut requires its own time — in lightly seasoned water until each is just cooked through and yields cleanly to a skewer. Remove each piece as it is done and allow to cool completely before slicing.

Slice all cooked meats across the grain at 1–2 mm — near-translucent thin. This step decides the dish: thick slices lose the textural finesse that defines fu qi fei pian; the heart should be tender, the tripe chewy, the tongue smooth, each quality expressed only at this thickness.

Prepare the ma la sauce immediately before dressing: combine sesame paste, chili oil, Sichuan pepper oil, soy sauce, black vinegar, sugar, and minced garlic. Stir until fully integrated. The sauce must be made close to serving — Sichuan pepper oil loses its numbing potency quickly. Taste for all dimensions: numbing, spicy, savoury, sour, sweet, and sesame. Each must register clearly.

Arrange a bed of julienned celery on a cold serving plate. Lay the sliced offal and brisket over the celery. Spoon the sauce over evenly. Serve immediately, cold. The celery should retain its crunch beneath the dressed meat.

Market — Offal sourced from any reliable butcher and cleaned with care; commercially bottled chili oil and Sichuan pepper oil; sesame paste from a Chinese grocer; brisket as the primary meat.

House — Brisket only, no offal; shop-bought chili oil and toasted sesame oil in place of pepper oil; standard rice vinegar substituted for black vinegar. The ma la character is present but the dish's defining textural complexity is lost.

Sensory Tests

◇Smell. After repeated blanching and scrubbing, the offal carries no trace of iron or animal odour — clean, neutral flesh only.
◇Touch. Each cut yields cleanly to a skewer when fully cooked; it should not resist or feel glassy at the centre.
◇Sight. Slices held to light are near-translucent; no slice exceeds 2 mm in thickness.
◇Taste. The finished sauce registers all five Sichuan dimensions in sequence: numbing, heat, salt, sour, sweet — followed by a lasting sesame finish.
◇Where it lives or dies. The dish lives or dies on paper-thin slicing at 1–2 mm: only at this thickness does each cut of offal express its distinct texture — tender heart, chewy tripe, smooth tongue — and carry the ma la sauce in the correct proportion to meat.
