S'mores

A large marshmallow skewered on a stick (or a long fork), held 10-15cm above the glowing embers (not the flame — the embers provide even radiant heat; flame chars the exterior instantly). Rotated slowly until the exterior is uniformly golden-brown and slightly puffed. The hot marshmallow is pressed between two graham cracker squares with a piece of chocolate (Hershey's is traditional) sandwiched against it. The marshmallow's heat begins to melt the chocolate. The assembly is compressed gently and eaten immediately — the exterior is slightly crispy, the interior is molten, the chocolate is half-melted, and the graham cracker crumbles provide the structural crunch.

The Method

Build or locate a campfire and allow it to burn down to glowing embers. The embers provide even radiant heat; open flame chars the exterior instantly and leaves the interior cold. Skewer one large marshmallow on a stick or long fork, positioning it 10–15 cm above the embers, not the flame.

Rotate the marshmallow slowly and continuously over the embers. This is where the dish lives or dies: patience and constant rotation are the only path to a uniformly golden-brown, slightly puffed exterior — neglect or haste produces an uneven char on one side and a raw interior on the other. The marshmallow is ready when the entire surface is uniformly golden-brown and the body has visibly puffed.

Lay one graham cracker square on a flat surface. Place the piece of chocolate on it. Slide the roasted marshmallow off the skewer onto the chocolate, press the second graham cracker square firmly on top, and compress the assembly gently. The marshmallow's heat will begin to melt the chocolate against it. Eat immediately: the exterior of the marshmallow is slightly crispy, the interior molten, the chocolate half-melted, and the graham cracker provides structural crunch.

Sensory Tests

◇Sight. The marshmallow exterior is uniformly golden-brown and the body has visibly puffed — no pale patches, no black char.
◇Touch. Light finger pressure on the marshmallow yields immediately; the interior is fully molten and offers no resistance.
◇Smell. A clean, lightly caramelised vanilla scent rises from the marshmallow — any acrid or burnt note signals the ember distance is too close or the rotation too slow.
◇Where it lives or dies. The dish lives or dies at the roasting stage: constant slow rotation at ember-height — not over open flame — is the only means of achieving a uniformly golden, molten marshmallow rather than a charred shell over a cold interior.
