The emiliano tagliere (cutting board) presentation of mixed salumi is not assembly but curation: the art of selecting and arranging 5–8 salumi in order of increasing intensity, so that each tastes better after the one before it. The canonical Emilian tagliere progresses from the mildest (mortadella, prosciutto di Parma) through middle (culatello, coppa) to the most intense (salame felino, culaccia, salama da sugo). The accompaniments are functional: Grana Padano absorbs fat; giardiniera cuts through richness; tigelle or crescentine carry without distracting.

The Method

Remove all salumi from refrigeration 30 minutes before service. Leave packages sealed until slicing. The fat of each cured meat must be fully relaxed and translucent at room temperature — the test is visual: the white fat on prosciutto and culatello shifts from opaque to a soft, yielding cream-white.

Slice each salumi to its prescribed thickness: prosciutto di Parma paper-thin on the machine; culatello at 1.5 mm; coppa at 2 mm; salame felino, culaccia, and salama da sugo at 3 mm. Mortadella at 2 mm, halved or folded into loose rosettes. This is where the dish lives or dies: uniform thickness across all salumi collapses the textural and flavour progression the tagliere is built to deliver — each cut has one correct thickness at which its fat and lean are held in the right ratio on the tongue.

Arrange the salumi on a wooden board in a strict arc from left to right (or top to bottom) in order of ascending intensity: mortadella and prosciutto di Parma first, culatello and coppa at centre, salame felino, culaccia, and salama da sugo at the far end. No two salumi of differing intensity should occupy the same visual zone. The test is spatial: a diner reading the board left to right must encounter no jump backward in strength.

Break the Grana Padano by hand or with a short, blunt knife into irregular chunks and place them at the mild end of the board. The chunks, not slices, are deliberate — Grana in chunks releases less surface moisture and functions to absorb fat between courses of the progression. The test is textural: a crumbling, granular interior, not a smooth shear.

Set the accompaniments — mostarda di Cremona, giardiniera, and squacquerone — in small vessels at the periphery of the board, not on it. The giardiniera is positioned adjacent to the intense end; its acidity is required to reset the palate after salama da sugo. The squacquerone pot sits at the centre; its mild fat ties the whole sequence. The test is smell: the vinegared giardiniera brine should be clearly perceptible when a diner leans over the board.

Warm the tigelle until the exterior is just firm and the interior steams when split. Scrape a small amount of lard inside each split tigelle and fill with a slice of salame felino. Serve the pane di Parma in a cloth-lined basket. The test is sound: a correctly warm tigelle gives a dry, hollow tap when struck on the base.

Present the board in full and instruct the table to begin at the mild end and move along the arc without skipping. Salumi are tasted in sequence, with grana, bread, or giardiniera taken between — not simultaneously with — each salume. The final taste check is progressive: mortadella, tasted first, should register as markedly gentle against the memory of the salama da sugo at the close.

Sensory Tests

◇Sight. Fat on prosciutto and culatello shifts from opaque white to a soft, yielding cream-white — the salumi is at room temperature and ready to serve.
◇Sight. The board reads as a clear arc from pale, lightly marbled mild salumi at one end to deeply coloured, heavily seasoned product at the other — the progression is visible before the first slice is taken.
◇Touch. A slice of prosciutto lifted from the board drapes freely over the hand without stiffness or cold resistance — the fat is fully tempered.
◇Touch. Grana Padano chunks show a grainy, crystalline interior fracture, not a smooth cut face — correct texture for fat absorption.
◇Smell. The sharp vinegar note of the giardiniera brine is perceptible at arm's length from the board — the accompaniment is active enough to reset the palate.
◇Sound. A split tigelle gives a dry, hollow tap on its base when warm — the interior is steamed through without being doughy.
◇Where it lives or dies. The tagliere lives or dies at the slicing stage: each salumi has one correct thickness at which its fat-to-lean ratio reaches the tongue in proper balance, and a board sliced to uniform thickness destroys the progression the entire presentation exists to deliver.
