Tagliolini al Tartufo Bianco delle Marche

The Marche's answer to Piedmont's tartufo bianco celebration: hand-cut egg tagliolini (2-3mm wide, paper-thin) dressed with nothing but good butter, Parmigiano, and fresh white truffle (Tuber magnatum pico) from Acqualagna — the most important truffle market in central Italy and the supplier to half of Europe. The tagliolini must be freshly cut, extremely thin, and served in bowls warmed to 60°C. The butter is emulsified with pasta water off-heat, the Parmigiano added, and the truffle shaved only at the table by the guest. An annual October-November ritual in Acqualagna.

The Method

Warm four deep serving bowls in a hot oven for 5 minutes immediately before service. Remove and rub the inside of each bowl with the cut face of the garlic clove — a single pass — then discard the clove. The bowls should be too hot to hold comfortably.

Work the flour and eggs into a smooth, firm dough. Rest, wrapped, for 30 minutes. Roll to the thinnest setting — the sheet should be paper-thin, translucent when held to light. Flour lightly and cut into tagliolini 2–3 mm wide. Lay on a floured tray and use within the hour.

Bring a large pot of well-salted water to a rolling boil. Drop the tagliolini; they will cook in 60–90 seconds. Reserve 60 ml of the starchy cooking water before draining. Drain the pasta thoroughly.

This is where the dish lives or dies. Working off the heat in the drained pasta pan, add the cold butter cubes to the hot drained tagliolini. Begin adding the reserved pasta water a little at a time, tossing continuously — the butter must melt into a cohesive, glossy emulsion, never a greasy puddle. Add the Parmigiano and continue tossing. The finished sauce should coat every strand in a uniform, lightly thickened film; if it tightens, add a splash more pasta water.

Distribute the tagliolini immediately into the warmed bowls. Carry the bowls to the table without delay — the warmth of the bowl sustains the volatile aromatics. Set the fresh truffle and a mandoline slicer before the guest, who shaves the truffle directly over the pasta at the table. The dish is served the moment the truffle lands.

Reserve — Fresh Tuber magnatum pico from Acqualagna, October–January harvest, same-day from the market; Parmigiano Reggiano aged 36 months minimum; hand-rolled pasta from stone-milled 00 flour and free-range eggs.

Estate — Acqualagna truffle purchased within 48 hours of harvest from a named supplier; Parmigiano aged 24 months; fresh pasta made the day of service.

Market — Fresh white truffle of verified Italian provenance within the canonical season; commercially milled 00 flour; good-quality unsalted butter.

House — Preserved or imported white truffle outside the October–January window; dried or frozen pasta — the dish loses its defining character at this rung and becomes a reference exercise rather than the thing itself.

Sensory Tests

◇Sight. The pasta sheet, held to the light, is translucent — the hand is visible through it; this is the correct thickness for tagliolini of 2–3 mm.
◇Touch. The serving bowls are uncomfortably hot to the bare palm — they will sustain the truffle's aromatics through the meal.
◇Sight. The emulsified sauce coats every strand in an even, slightly viscous film with no pooling of separated fat at the base of the bowl.
◇Smell. At the moment the truffle is shaved over the warm pasta, the volatile aromatics open fully — an immediate, intense, earthy-garlicky perfume rising from the bowl signals the dish is ready to eat.
◇Where it lives or dies. The butter emulsification off-heat is the single critical junction: cold butter added gradually to hot pasta with measured pasta water must bind into a uniform, glossy sauce — if the heat is too high or the water too little, the butter splits and the dish is irretrievably greasy.
