Torrone di Benevento con Mandorle e Miele Millefiori

The canonical torrone (nougat) of Benevento, Campania's most celebrated confection — beaten egg whites and wildflower honey cooked together in a bagnomaria (double boiler) while almonds (toasted whole) are folded in, then poured onto wafer paper and pressed into blocks. The Benevento torrone is softer and chewier than the harder northern Italian versions — the honey type and cooking time determine the consistency.

The Method

Heat the oven to 160 °C. Spread the almonds on a baking tray in a single layer and toast for exactly 12 minutes. Remove and hold warm — under-toasted almonds contribute nothing to the finished torrone; over-toasted turn bitter against the sweet honey base.

Place the honey, lemon zest strip and vanilla in the upper vessel of a bagnomaria set over barely simmering water. The water must not touch the base of the upper bowl. Warm the honey gently, stirring, until it is fully liquid and aromatic.

Beat the egg whites to stiff, glossy peaks in a clean bowl. The peaks should stand upright and not fall when the whisk is lifted.

Fold the beaten egg whites into the warm honey in the bagnomaria. Cook the combined mixture, stirring constantly with a wooden spoon or heat-resistant spatula, for 30 to 45 minutes. The temperature must not exceed 80 °C at any point — this is where the dish lives or dies: too high and the egg white scrambles, producing a granular, broken mass rather than smooth, cohesive nougat. Monitor with a thermometer throughout and adjust the heat under the water bath accordingly. The mixture is ready when it forms a firm ribbon that holds its shape when lifted from the spoon, and a small drop placed in cold water forms a firm thread that can be gathered between the fingers.

Remove the lemon zest. Fold in the warm toasted almonds quickly and decisively — the mixture begins to firm the moment it leaves the heat and delay makes even distribution impossible.

Lay two sheets of wafer paper on a clean work surface or in a lightly oiled 20 × 30 cm frame. Pour and spread the torrone mixture in an even layer, then lay the remaining sheets of wafer paper on top. Press firmly and evenly with a flat board. Weight the board overnight at room temperature — this sets the structure and expels any remaining air bubbles. The slab is ready when it holds a clean edge under a sharp knife with no crumbling.

Unwrap and cut into portions with a sharp, heavy knife — a rocking motion rather than a sawing one gives a clean face. The cut edge should be smooth and slightly translucent, not porous or honeycombed.

Reserve — Raw single-origin Campanian millefiori honey from a named beekeeper; almonds from Avola or Toritto, hand-sorted; fresh organic egg whites; wafer paper from a specialist confectionery supplier.

Estate — Campanian millefiori honey of declared provenance; good-quality Italian blanched almonds; free-range egg whites. The floral foundation remains intact.

Market — Any unfiltered wildflower honey; standard blanched almonds; fresh egg whites. Acceptable texture and flavour, though regional character is diffused.

House — Commercial blended honey and pre-roasted almonds. The torrone will set and be edible, but the floral perfume — the defining quality of the Benevento style — will be largely absent.

Sensory Tests

◇Touch. A small drop of the cooked mixture placed in cold water forms a firm thread that can be gathered and held between the fingers without dissolving.
◇Sight. The mixture forms a firm ribbon that holds its shape momentarily when lifted from the spoon before folding back.
◇Smell. Toasted almonds release a warm, roasted fragrance in the oven — the signal that they are ready and not yet over-coloured.
◇Touch. After overnight pressing, the slab holds a clean, firm edge when tested with a fingernail — neither sticky nor brittle.
◇Where it lives or dies. The bagnomaria temperature must never exceed 80 °C during the 30–45-minute cook: above this threshold the egg white scrambles and no amount of subsequent work recovers a smooth nougat.
