Tuile: Thin Sugar Cookie and Shaping Window
A very thin, lacey sugar-butter-flour batter spread on a baking mat and baked until golden and pliable, then shaped immediately (curved over a rolling pin, formed into a cone, draped over a bowl) before it sets hard. Once cooled, it is brittle and fragile.

The Method

Cream the softened butter and caster sugar together until just combined — do not aerate. Stir in the sifted flour, then the egg whites, mixing to a smooth, fluid batter. Refrigerate for approximately 1 hour. The batter is ready when it has firmed slightly and spreads evenly without running.

Heat the oven to approximately 180 °C. Line a baking sheet with a silicone mat or non-stick baking parchment. Using a small offset spatula or the back of a spoon, spread the rested batter in thin rounds to approximately 1–2 mm — thin enough to be translucent when held to light. Bake only two or three tuiles per sheet. The batter is ready to bake when it lies flat with no pooling at the edges.

This is where the dish lives or dies. Bake until the tuile is uniformly golden throughout — the centre must match the edges in colour. At approximately 180 °C, the window between uniformly pale-golden and over-browned is approximately 30 seconds; watch the centre, not the clock. Remove from the oven at the moment uniform golden colour is achieved. A pale centre means the tuile will not set firm; an over-browned tuile is bitter and cannot be corrected.

Working within 30 seconds of removing the sheet from the oven, lift each tuile with a thin palette knife and drape immediately over a rolling pin for the classic curved tile shape, press into a cone mould, or drape over an inverted bowl. The tuile is ready to release from the shaping tool when it holds its form without springing back — this takes only seconds. Once cooled, it is brittle and fragile; handle accordingly.

Reserve — 84 % fat unsalted butter of known provenance; unrefined golden caster sugar; batter rested overnight under refrigeration for maximum spread consistency.

Estate — Quality unsalted butter; fine caster sugar; batter rested the full hour refrigerated; silicone baking mat for even heat distribution.

Market — Standard unsalted butter; caster sugar; batter rested at least 30 minutes; non-stick parchment in place of a silicone mat.

House — Salted butter rinsed and dried; granulated sugar processed fine; batter used without resting — spread will be less even and shaping window tighter.

Sensory Tests
◇Sight. Batter spread to translucency at 1–2 mm — held to light, the mat or parchment beneath is visible through the unbaked round.
◇Sight. Uniformly golden colour across the full surface of the tuile, centre matching edges — this is the sole signal to remove from the oven.
◇Touch. Immediately out of the oven, the tuile lifts cleanly and bends without cracking — it is pliable and warm to the touch.
◇Touch. Once shaped and cooled, the tuile is rigid and snaps cleanly under light pressure — it is set and ready.
◇Where it lives or dies. The tuile must be pulled from the oven at the precise moment of uniform golden colour throughout — neither a pale centre nor any trace of over-browning — because that 30-second window is the only moment at which it can be shaped, and the colour cannot be corrected after the fact.
