Whitebait (Īnanga)
The classic NZ whitebait fritter: fresh whitebait, one egg, a pinch of salt, and nothing else — no flour, no onion, no herbs. The batter is just enough egg to bind the fish. Spoonfuls are dropped into a hot pan with butter and fried until golden on both sides — approximately 2 minutes per side. The fritter is served on white bread with a squeeze of lemon and butter. That is the canonical preparation. Any addition beyond egg and salt is considered heresy by West Coast traditionalists. Whitebait are also eaten in omelets, on toast, or (rarely) in tempura, but the fritter is the benchmark.
