Mānuka (Honey, Smoke, and Medicine)

I · Origin

Mānuka (Leptospermum scoparium) is NZ's most commercially valuable native plant. Mānuka honey — with its distinctive methylglyoxal (MGO) antibacterial properties — is NZ's preferred food export, commanding prices up to NZ$400/kg for UMF 20+ grades. But mānuka is also the smoking wood of choice for NZ chefs (like kiawe in Hawaiʻi), and its leaves and bark have been used in rongoā Māori (traditional medicine) for centuries — brewed as tea for colds, used as poultices for skin conditions. The smoke, the honey, and the medicine are three expressions of one plant.

II · Description

Three expressions: Smoke — mānuka wood chips are used for hot-smoking and cold-smoking fish (particularly kahawai, and salmon). The smoke is warm, resinous, slightly sweet — distinct from European hardwood smoke (oak, hickory) and from Hawaiian kiawe smoke. Honey — mānuka honey is rated by UMF (a methylglyoxal-potency grading system) or MGO content. UMF 5+ is table honey. UMF 10+ has demonstrable antibacterial properties. UMF 20+ is preferred, medicinal-grade. The flavour intensifies with UMF rating: higher-grade mānuka honey is darker, more viscous, more bitter, more complex. Medicine — mānuka leaf tea is brewed for colds and sore throats; mānuka oil (distilled from leaves) is used topically.

IV · Flavour Context

Mānuka smoke: warm, resinous, slightly sweet, with a complexity that European hardwood smoke lacks. Kahawai cold-smoked over mānuka is a NZ classic — the oily fish absorbs the smoke deeply. Mānuka honey: UMF 5-10: mild, sweet, slightly herbal. UMF 10-15: complex, slightly bitter, with caramel and malt notes. UMF 20+: intensely flavoured, dark, viscous, bitter-sweet, almost medicinal. As a cooking ingredient: glazes for roasted meats, sweetener for native-herb teas, component in Fiso's desserts.
