The Kukusan: Indonesian Steaming

The kukusan — a conical woven bamboo steaming basket that sits inside a pot (the dandang) of boiling water — is the traditional Indonesian rice steamer. Unlike the flat Chinese bamboo steamer, the Indonesian kukusan is CONICAL — the shape allows steam to rise and circulate around the rice from all directions, producing evenly cooked rice without stirring.
