The Greek meze table — the array of small preparations that precede or constitute a meal — is both one of the oldest organised food traditions in Europe and the model for what the Western world understands as "appetisers." The word meze entered Greek from Turkish (meze — from Persian, which entered through the same channel as the Levantine tradition) but the specific Greek approach to the small dish tradition is distinct from its Ottoman and Levantine counterparts.
