Indigenous yeast fermented in open-top wooden tanks; aged 12 months in old Burgundy barrels. Vibrant ruby; fresh wild cherry, blackberry, garrigue herbs, and a granite mineral freshness. Exceptionally food-friendly with an easy, natural character. Drinks beautifully at 3–8 years.
