Dom Pérignon P1 Vintage

Champagne, France
The first plénitude of Dom Pérignon — released after 8–10 years on lees. A blend of Chardonnay (~55%) and Pinot Noir (~45%) from a single exceptional vintage. The P1 release represents the wine at its first maturity window — opulent, toasty, creamy, with the primary fruit still vibrant. Great vintages: 2008 (benchmark), 2012, 2013, 2015. The P2 (15 years on lees) and P3 (25 years on lees) represent deeper maturity stages. BC: Mark Anthony Group. CAD $250–$450 for P1.

Dom Pérignon's creamy richness and toasted hazelnut character aligns with roasted chicken's Maillard crust and morel mushrooms' earthy umami. The Champagne itself in the roasting sauce creates a complete terroir alignment. A classic grand occasion pairing.
