Where Hakutsuru's standard expressions produce the reliable, accessible sake that built the brand, Tora no Ko demands everything: 35% seimaibuai Yamada Nishiki, extended low-temperature ginjo fermentation, minimal intervention. The Miyamizu hard water at this polishing level reveals its mineral backbone as an asset: the structure that supports the delicacy rather than dominating it.
