Juyondai Honmaru Junmai

Yamagata, Japan
Juyondai (Fourteen Generations) is Japan's most mythologised sake — the Petrus of the category. Takagi Shuzo produces in tiny volumes in Yamagata, distributes exclusively through a lottery to approximately 100 selected domestic retailers, exports nothing officially, and maintains this structure regardless of demand. The result: a sake whose reputation has outrun its availability, whose quality genuinely justifies extraordinary prices, and whose possession signals the deepest sake knowledge network. Honmaru (Main Keep — referring to a castle's central tower) is their most distributed expression, though 'distributed' is relative when the annual production is in hundreds rather than thousands of cases.
Yamagata's soft mountain water and premium Yamada Nishiki at medium polish (60% remaining for Honmaru): fresh white rice, peach blossom, faint mineral, a distinctive floral note from Yamagata's GI yeast programme
